Water Slide through a Shark Tank at Atlantis

Our last adventure in Nassau included a two day stay on Paradise Island and since the hotel we were staying at (Comfort Suites Paradise Island) was located next to Atlantis Resort and included a day pass to the Atlantis amenities, we decided to make use of it and explore the humongous property.

Although much larger and busier than properties we usually opt to hang around, we’re up to checking out just about anything new and enjoyed exploring all of the amenities this resort has to offer.

While walking through the grounds, we noticed a large shark tank and made our way over to check it out.

There were numerous sharks of different species swimming around, many coming close to the glass, causing shouts of glee from the wee ones gathered around.

We saw a large tube in the middle with people on inflatable tubes floating through.

Cool, we thought and decided to give it a try.

There are two different slides that shoot through the shark tank. One is called the Leap of Faith and consists of a pretty substantial vertical drop into a tube. We opted for the more leisurely “Serpent Slide” in which you board a single or double inner tube and after a short drop in the dark, the tube opens up to a view of the sharks surrounding you – several of them just lounging around on the top to the tube!

As cool as Swimming with the Sharks on Compass Cay? Nothing ever beats observing sea life in a more natural habitat, but the shark slide at Atlantis was pretty interesting to say the least.

Tips On Booking an Affordable Caribbean Vacation

Traveling isn’t cheap and traveling to a beautiful island for a week in the sun and sand can be downright budget breaking. Comments we see frequently on our Facebook page in response to gorgeous island location pictures include “maybe in our next life” or “if only I could afford it”.

We get it. We’ve been fortunate to have traveled to many tropical destinations over the years, but for many years we had to get very creative in putting together a package that we could afford. Here are a few of the tricks and tips we’ve learned that may just help you plan for an economical and well deserved beach vacation.

1. Be flexible. If you’re determined to visit the one destination that you’ve always wanted to see at the time of year you want to see it, you may end up paying more. Make a list of several islands that you’d enjoy and explore the airfare and accommodations at each one.

2. Consider traveling during low season or the shoulder season. The Caribbean low season is generally considered to be June to mid-December. Unfortunately much of that time is also hurricane season. We generally avoid travel to the Caribbean during the peak hurricane months of mid-August to mid-October, but have enjoyed many wonderful vacations with great weather and cheaper prices in May, June, July, November and December. If you’re worried about the potential for bad weather, check into travel insurance to see if it can protect you from weather related delays and problems.

3. Look into different packages that combine airfare with accommodations and sometimes even transfers or car rental. We’ve booked packages through American Airlines Vacations and Apple Vacations and have also booked packages through some resorts and cruises that can quote airfare along with their accommodations. Costco and Sam’s Club also offer travel deals! The selection of resorts and destinations vary and can be limited in these type of packages, but it’s definitely worth researching.

4. Frequent Flyer miles. We used to get a lot of “mileage” out of these and although they are still available and widely used, we’ve found that they’ve become much trickier to use. That being said, there are still deals to be had for travel savvy individuals. Some companies offer lots of “free miles” for opening up a new credit card (we recently got 35,000 miles for opening up a new US Airways card – also good on American Airlines), and if you can be flexible in your travel dates or can plan way ahead, you may be able to score free or discounted flights.

5. Consider renting a villa, house, apartment or condo. This option can be extremely attractive if you are traveling with children or with a large group. We rented a villa on the beach with a pool in North Caicos with a total of 6 adults. We were able to cook many of our meals in the villa (which had a beautiful well appointed kitchen with granite countertops and plenty of dining space) and enjoyed lounging in the pool and walking the beach just steps from our villa. We split the cost of the villa per person and it was one of the most affordable accommodations we’ve come across. There are several good companies to check with, including VRBO and HomeAway and know that at least one offers insurance in case there are any problems with the rental. Be sure to check the cleaning rates and the deposit amount on your desired rental.

7. Consult a Travel Agent. Travel agents can know of special deals on airfare and resorts that we may not find on the internet, so it’s worth checking in with one to find out.

8. Call a resort directly. Resorts occasionally have specials, discounts or packages that aren’t widely publicized. If you have a particular resort in mind, call them directly to see if they have an upcoming deal – or if perhaps you could receive a free room upgrade!

9. Consider traveling on atypical days. If you have a little flexibility in your schedule, check the pricing on airfare and accommodations mid-week to mid-week instead of Saturday to Saturday.

10. Shorten your stay by one day. If you find a place you REALLY want to stay and it’s just a little over budget, check the pricing for 6 days instead of 7. This may put you right in the budget you’re looking for.

11. Search RedWeek for timeshare rentals in your desired destination. Timeshare rentals are timeshares that owners rent to other individuals when they can’t use them themselves. RedWeek.com is the largest online marketplace for timeshares. Owners post their timeshare units on the RedWeek site, and connect directly with travelers looking to rent – usually for a pretty good price!

Hopefully these tips will help you find a good deal on a Caribbean trip of your dreams to get your toes in the sand sooner rather than later.

Tropical Depression Drink

We recently saw a Tropical Drink Recipe said to be served at the beautiful Scrub Island Resort in the BVI and thought we’d give it a try. We made our own mango and strawberry purées by thawing frozen mango and frozen strawberries (be sure to keep the juice as it thaws) and then throwing it in the blender until liquefied. We opted not to add any sugar to the mix, thinking the fruit would be sweet enough and were happy with the results.

Be sure not to add too much ice as you are blend everything together. We started with about 1/4 c. and added a piece or two more. If the mixture is too thick, add a splash or two of lemon lime soda or Ginger Ale and stir.

The recipe called for a garnish of toasted coconut, which we didn’t have on hand, but I’m sure it would compliment the taste quite well. Other options would be a sprinkle of freshly ground nutmeg or a dark rum floater.

Servings:

Ingredients

2 oz Mango Purée
2 oz Strawberry purée
1 oz Dark Rum (we used Gosling's Black Seal Rum)
1 oz Triple Sec
1 oz Amaretto
1 oz Coconut Creme (we used unsweetened Coconut Creme. If you like your drinks sweeter, you can use sweetened Coconut Creme or Creme of Coconut)
1/4 c Ice
Toasted coconut, pineapple and maraschino cherries (for garnish)

Instructions

Blend all ingredients with ice until smooth.
Pour into a rocks glass and garnish with toasted coconut, pineapple and maraschino cherries.

Sunday Serenity: A Boat Nap

We recently were going through some photos of past travels and ran across a pic we had taken of a young man thoroughly enjoying an afternoon nap on a boat in Anegada.

That got us to thinking about one of our favorite things to do during a sailing vacation.
Take a nap.

The gentle rock of the sea, the warm sun on your skin and a fresh sea breeze all combine to make a perfect recipe for some zzzz’s, and we try to enjoy that as often as possible while on a boat.

Can’t wait to go sailing again and take a nap…

Exploring Gillam Bay, Green Turtle Cay, Abaco

We had just a short time on Green Turtle Cay during our Abaco sail trip and were determined to make the most of it. After thoroughly enjoying our Goombay Smashes and conversation with Smitty at Miss Emily’s Blue Bee Bar, Smitty mentioned that we really should go and visit the “beach”. That way, he said, pointing somewhere to the east.

Thanking Smitty and buying a jug of Goombay Smash to go, we hopped in our golf carts and headed in the suggested direction.

Coming to a fork in the road, a sign indicated beach in either direction, so we decided to veer left. Just a few yards away the brush opened up to reveal Gillam Bay.

It was obviously low tide and gasp! – the bay was filled with sandbars dotting the shallow, beautiful, clear water.

It was getting late in the afternoon and we knew our sunlight hours were limited, so we immediately went wading in the shallow water on our way out to explore some of the sandbars.

We began to see signs of sea life on the sandbars; much of it the usual suspects, such as mini starfish,

and live sand dollars making their way through the soft sand.

But then there was this…

The odd looking creature writhed its way out of the hole and laid down in the sand.

We later found out that the strange creature was most likely a sea cucumber. Sea cucumbers are echinoderms—like starfish and sea urchins, and have very interesting defense systems, such as excreting a sticky stream of goo to ensnare their enemies or expelling internal organs and then regenerating new ones!

Interesting. Anyway, we explored the sandbars until dusk, then made our way back to the boat. Smitty was so right. We certainly enjoyed beautiful Gillam Bay, it’s sandbars and it’s interesting creatures.

Coconut Rum Punch

We’re big fans of rum punch – all kinds, made with fruit juices or fruit and different rums. Such an easy drink to change up and play with different combinations of flavors. We ran across this Coconut Rum Punch recipe by Kimberly of A Night Owl on Pinterest, and were initially attracted by the delicious looking picture, but after putting it together, the taste is equally delicious! We made a smaller version of the recipe than originally posted (we didn’t want to waste any!), but you can easily double it for adult get-togethers!

Coconut Rum Punch

Course: Drinks

Servings:

Ingredients

1/2 c. Coconut Rum
1 c. Orange Juice
1 c. Pineapple Juice
1 c. Ginger Ale
1/2 c. Grenadine
Maraschino Cherries (for garnish)

Instructions

Mix together the coconut rum, orange juice, pineapple juice and ginger ale.
Pour over ice in tall glasses.
Slowly add equal parts grenadine to each glass.
The grenadine will sink to the bottom creating a beautiful looking drink. Garnish with a skewer of maraschinos add a biodegradable straw and enjoy!

5 Days on Staniel Cay, Part 3 – Off the Cay

In 5 Days on Staniel Cay, Part 1, we talked about the beaches on Staniel Cay and in Part 2, we highlighted some of the other attractions on island that we were lucky enough to experience. In this last part, we’re going to feature the area surrounding Staniel Cay – which are just a short boat ride from Staniel Cay and definitely worth exploring!

Exuma, a long chain of stunningly beautiful islands, or cays – 365 of them, that start about 35 miles south of Nassau, Bahamas. The Exuma Cays are the northernmost part of this chain and much of it is easily accessible from Staniel Cay.

If you have boating experience, you can rent a boat for the day or the week from Coral at Staniel Rentals, or 1/2 day and daily rentals from Nicole at 3N’s Vacation Services. If you’re not comfortable navigating your own boat, Nicole can also arrange a guided tour of the surrounding cays for you.

During our all too short stay, we first took a guided tour of the surrounding area, which included snorkeling at Thunderball Grotto,

Swimming with the pigs at Big Major Cay,

Swimming with the nurse sharks on Compass Cay,

And a fun afternoon playing on the sandbar near Little Pipe Cay.

We enjoyed the day so much that several days later, we decided to rent a boat of our own to explore more of the incredible area. We swam with the pigs again, then headed north for more time on Compass Cay, where we spent time chatting with Tucker, the proprietor of Compass Cay Marina,

Boating through some of the clearest, bluest water we’ve ever seen,

Then spending the last several hours of our day on Sandy Cay, exploring the tiny uninhabited island and the long arc of white sand sandbar that appears during low tide.

Dark ‘N Stormy Ice Cream

If you’re on a diet, you might as well just close this page right now. We could practically feel our clothes getting tighter just reading the list of ingredients, but we forged ahead. You know this job requires some sacrifices in the name of “rum research”.

Anyway, we saw this recipe posted by Gosling’s Rum the other day, and being big fans on their Dark ‘N Stormy Drink, we knew we had to give it a whirl.

There are a few steps to it, and we modified the steps just slightly to make it a bit easier (and to use a few less pots and pans) and the results were still, well, rumlicious. And, as if the ice cream isn’t rich enough by itself, we decided to make a rum sauce (find our rum sauce recipe after the ice cream recipe) and drizzle it over the ice cream before serving…seriously yum.

Oh, and if you don’t want to go through all the steps to make the ice cream from scratch, Goslings recommends “buying some of the best vanilla ice cream you can find to soften. Add chopped crystalized ginger and Gosling’s Black Seal Rum and blend it all in. Re-freeze and serve when ready.” Hmmm. Maybe we’ll try it that way too!

Dark 'N Stormy Ice Cream

Delicious, creamy and spiked! Not diet friendly, but SUPER rumlicious!

Course: Dessert

Servings: quart

Ingredients

For the Ice Cream

1 c. Sugar
2 c. Milk
2 c. Heavy Cream
8 Egg Yolks (Large)
1/2 c. Gosling's Black Seal Rum
1/2 c. Crystalized Ginger (chopped fine)

For the Rum Sauce

1/2 c. Brown Sugar
1/3 c. Butter
1/8 tsp. Vanilla
3 Tbs. Dark Rum (we used Goslings)

Instructions

To make the Ice Cream:

In a saucepan combine the sugar, the milk, and the cream and scald the mixture over moderate heat, stirring.
In a large bowl beat the egg yolks until they are light and thick and pour in the milk mixture through a fine sieve in a stream, stirring.
Cook the mixture moderate heat, stirring, until it coats the spoon. Transfer the custard to a metal bowl set in a bowl of ice and stir until it is cool.
In a small stainless steel or enameled saucepan reduce the Black Seal Rum over moderately high heat by half, taking care it does not ignite. Allow it to cool.
Stir the Black Seal Rum and the crystalized ginger into the custard and chill the mixture, covered, for 2 hours.
Pour into an ice cream maker to finish chilling and mixing.

To make the Rum Sauce:

Melt butter in a saucepan over low heat. Add brown sugar and stir until dissolved.
Turn off the heat, but leave the saucepan on the stove. Slowly and carefully pour in the rum, stir until it thickens slightly.
Using a small spoon, drizzle over a bowl of ice cream.
