Cachacier – Celebrating Cachaça, Brazil’s National Spirit

Cachaça (pronounced ka-sha-sa), sometimes referred to as a Brazilian Rum, has some similarities to rum, but can actually stand in a category of its own. If you enjoy rum, especially fine “rhums”, you should really explore the world of cachaça as you will likely find it an excellent addition to your rum collection.

Known as the “people’s spirit” in Brazil, the very early cachaças were not considered to be the finest of spirits. According to Peter Banks, the Founder and CEO of Cachacier, “The image of cachaça was refreshed in the mid-90’s when the President of Brazil declared cachaça a unique product of Brazil. A few years later, a new generation of producers who had grown up with family members consuming and producing cachaça began to take over. They sought to produce higher quality spirits, and the results really speak for themselves.” 

There are definitely similarities between rum and cachaça, although cachaça actually is said to predate the first production of rum. To be considered cachaça, it must be produced in Brazil and it can only be made from sugarcane juice and not molasses. The use of sugarcane juice makes it more akin to the taste of an Agricole rhum than the sweeter taste of a molasses-based rum.

Cachaça can be aged in many types of wood. Frequently local wood is used, although oak, which is not local, is still used by a number of producers in the aging process. When tropical woods are used such as Jequitibá, Amburana, Zebrawood and wood from other trees exclusive to the region, the cachaça producer opens themselves up to a myriad of unique flavor combinations and profiles.

So why don’t we hear more about cachaça? Word about this Brazilian spirit has begun to emerge and through websites like Cachaça for Gringos, a lot of info is becoming available, leading to increased interest in learning about cachaça and trying it.

Peter Banks, as mentioned above, found a passion for cachaça after living in Brazil for 8 years. He began to see that there was something special about it after visiting some of the many cachaça clubs that meet in Brazil to talk about cachaça, meet different producers and try their products. He then started visiting distilleries and writing about cachaça and began to realize that people in the US had very limited access to good cachaça. According to Peter, “There are about 1,000 producers (officially, though many more unofficial), but less than 1% of all production gets exported every year, and most of that is from the big players owned by Bacardi, Diageo. However, he continues, the small producers are the interesting ones.”

In 2021, Peter took the first steps towards creating a company called Cachacier, with the purpose of working with different distilleries in Brazil, importing some of their products and helping to help introduce them to the US market to expose Americans to the cachaça universe. We recently received two beautiful bottles of Cachacier’s recentlly released Collection One from their first partner distillery, Princesa Isabel, located in Espirito Santo, just northeast of Rio de Janeiro.

This first collection includes a silver expression that is aged 2 years in Jequitibá and a 4-wood blend expression aged 2 years in Jequitibá, Amburana, Jaqueira and Balsamo. Peter said that these expressions were chosen because they are very unique to cachaça and aren’t found in any other types of rum.

Not having tried cachaça before, we were anxious to give this first collection from Cachacier a try. We found both expressions to be delightful. Although there were some similarities to an Agricole type “rhum”, these two cachaças were a bit softer with unusual but pleasant notes – most likely from the terroir of the sugarcane and the types of wood used in the aging process. The 4-wood blend we enjoyed best neat. The silver was also very good as a sipper, but additionally worked well in a Caipirinha, the national drink of Brazil.

Santa Teresa 1796, A Premium Venezuelan Rum

We received a beautiful bottle of award-winning Santa Teresa 1796 in the mail recently and have really enjoyed learning about the brand, the rum and the history of Santa Teresa. Santa Teresa 1796 is, in our opinion, an excellent sipper, but also works very well in cocktails such as the Santa Teresa Spicy Mango Daiquiri, which don’t overpower the taste of the delicious rum .

We had the opportunity to interview Marlo Gomora, brand ambassador for Santa Teresa 1796. Marlo provided a wealth of information on the brand, the history and this delicious rum as well as his thoughts on why dark rum is leading the game as an emerging spirit.

HISTORY
The story of Santa Teresa, the oldest Venezuelan producer of blended and aged rums, began 225 years ago at The Hacienda Santa Teresa in Venezuela’s Aragua Valley. The brand has a long and rich history of enduring war, land invasions and other turmoil, yet it continues to thrive.

The Hacienda Santa Teresa is an independent, family-owned company. After surviving the war, Gustav and Panchita Vollmer took over the Hacienda and dedicated their lives to rebuilding the lands and continuing their family legacy. The Vollmer family has been distilling sugar cane and bottling rum at the Hacienda ever since, improving its recipes and passing down tried and true techniques.


SANTA TERESA 1796
In 1996, to commemorate the Hacienda’s bicentennial, Alberto Vollmer Herrera challenged the company to develop a rum that could leverage all of the rum making mastery and craftsmanship learned in the first 200 years. With the help of Master Distiller Néstor Alfonso Ortega Sotero, who has been with the brand for 40 years, Santa Teresa 1796 was born.

Everything used to make Santa Teresa 1796 – from the sugar cane to the water – is sourced from the brand’s estate and local farms in the valley.  This terroir provides the perfect environmental conditions for aging rum, from its rich soil to its temperate climate. From fermentation through distillation, aging and blending, it all happens at the Hacienda.  


SOLERA METHOD
According to Marlo, Santa Teresa is the first super-premium rum to use the Solera method, a Spanish method of maturation commonly used with sherry and wine. In a nutshell, the Solera method consists of a tier of casks. The lowest casks contain the the most mature liquid – in this case rum, and the highest casks contain the least aged rum. When bottling, some of the rum is removed from the bottom cask and the space created by this process is filled with liquid from the level above. The purpose of this labor-intensive process is the maintenance of a reliable style, consistency and quality of the Santa Teresa 1796. The young rum is influenced by the older rum in the barrel into which it has been placed.

To create the smooth, dry rum, a complex blend of light , heavy and pot still rums aged between 4 to 35 years in bourbon barrels are processed in the Solera to create Santa Teresa 1796.

Rum Infused Coffee by Fire Dept. Coffee

Yesterday we received a special delivery of coffee from Fire Dept. Coffee, a veteran-owned business dedicated to providing great-tasting coffee to people everywhere. Marque Reserve Exxtra Anejo Rum

Marque Reserve Exxtra Anejo Rum is a new rum offering from Golden Age Spirits based in the East Coast of the US. We recently received an attractive bottle of Marque Rum – a blend of rums from the cane fields of Barbados, Panama and Dominican Republic. Each of the individual rums in Marque Reserve are aged 8-10 years in the Caribbean before the final blend is produced. The final product has no sugar in it nor any artificial additives.

The Rum for Bourbon Drinkers
In their promotional material, Marque Reserve, which is aged in bourbon barrels, was said to be “the” rum for bourbon drinkers. As one of us here at Rum Therapy also appreciates a good bourbon, we were excited to explore this flavor profile.


The Bottle
Marque Reserve has a great look. The shape, cork and label took us back to the era of pirates and rum, but with a cool, contemporary touch.

We took a ton of photos of the bottle before opening to preserve the unopened bottle look, all the while wondering what we were about to taste. There was a thick melted wax cap that covered the cork that was affixed quite firmly. After fumbling around, trying to remove the wax, we poured some in a glass and began our tasting.

The Experience
The anticipation was worth it. Marque Reserve is interesting. Different than anything we’ve tried. We worried that it might be a bit harsh due to the slightly higher alcohol content (45% ABV), but it quickly smoothed into a very nice combination of vanilla/toffee balanced with a pleasant toasted oak taste. It received the stamp of approval from the bourbon guy here too.

Recommendations
We think you’ll find that this is a great sipper for those of you that prefer rums with no added sweetener. We enjoyed it most without ice to maximize the flavors. It also worked very well in this Winter Marque Cocktail, as well as this Rum Old-Fashioned.

We were recently contacted to find out if we would be interested in learning more about a new rum called Rumcojones. I must say it’s been a pleasure. Rumcojones was created to be the best tasting cinnamon rum on the market. The product was just recently launched in January of 2020 and is already expanding into new markets. We talked to the owners to find out more about them, the concept and the rum. This is what we learned.

About the Owners/Creators

We are 4 Tampa local guys with a diverse experience in the fields of engineering, information, and marketing in the food and beverage industry in the US and South America. None of us have less than 20 years of experience in the field. Basically the 4 of us are immigrants from Cuba and Venezuela with a positive message that “it takes cojones to do the right things”. Although we are selling rum, we didn’t want to be another pirate with a cannon ball and a secret map drinking in a Caribbean tiki bar. We wanted to stay away from the pirate theme and focus on a real sipping experience; smooth and with a hot cinnamon burn insinuating a positive attitude toward life. Nothing that we get in this life should be taken for granted, no one is going to do it for you, and if you really want something, no matter what it is, you’ve got to have cojones and go get it.

The Concept

Rumcojones was created to be the best tasting cinnamon rum in the market. That play in the words “Rum” and the Spanish slang word “Cojones” embodies the qualities of being courageous and having nerves of steel. Rumcojones is crafted from a proprietary wash made of sugarcane molasses. This nutrient-rich blend of unsulfured molasses feeds a unique yeast strain and is fermented. The basic ingredients are sourced primarily from Florida.

We have been working to develop Rumcojones for the past 3 years. Conceptualization and formulation were the main time consuming aspects. We did over 25 formulas then tested them through blind tastings in Florida with over 575 end users or consumers at different demographic liquor stores and focus groups. We wanted to find out through research what could be the key element that would make Rumcojones unique.  There are many spiced rums but no cinnamon rum available with this taste profile in the rum category.

It Takes Cojones to Drink Responsibly.
The Rum

We decided that the product needed to be less sweet compared to similar flavored spirits in the market.   Rumcojones turned out to have a 24-25 Brix versus similar products that are over 31-32 Brix and even higher, meaning that we have a product with less sugar and a smoother taste. Another important aspect is that we do not use High Fructose Corn Syrup or Propylene Glycol, we use pure cane sugar and vegetable glycerin.

Rumcojones is crafted from a proprietary wash made of sugarcane molasses. This nutrient-rich blend of unsulfured molasses feeds a unique yeast strain and is fermented. The basic ingredients are sourced primarily from Florida. The rum is distilled from sugar cane molasses and bottled in New Port Richey FL.

The final distilled rum blend is 100% column still pure rum. Column still rum is crucial in blending natural cinnamon oil into the rum. The ideal starting material is key in creating the smoothest tasting rum. Natural flavors are derived from cinnamon oils and used to deliver that characteristic smooth burn, creating an impeccably balanced rum.

As we taste tested Rumcojones, we sampled it neat, over one ice cube and with a splash of apple juice. All were very good. Additionally, we created a recipe incorporating Rumcojones and other ingredients that we imagined would be complimentary such as apple juice, cream and caramel and called it the Creamy Cojones Cocktail. Takeaways

We found Rumcojones to be enjoyable, versatile and smooth. It’s versatile in that it can be sipped neat or with a splash of apple juice or used in a variety of cocktails. The smooth cinnamon taste is invigorating. It will make a welcomed addition to our rum cabinet!

24 Days of Rum – the Original Rum Calendar

A special thanks to Glenn for allowing us to review the concept, packaging and contents of this product. We enjoyed the “research” immensely.

Imagine having the opportunity to sample rum from 24 different countries, compare tasting notes and get details about each of the rums including the type of still used, the country it’s from, alcohol content, and age. A rum lover’s dream…

Well, that’s exactly what’s available in a product from 1423 World Class Spirits called 24 Days of Rum – the Original Rum Calendar.

Fashioned after an advent or Christmas countdown calendar, this unique package includes two tasting glasses, 24-50ml bottles of rum, some well known, others unknown gems, and two tasting note books to document your findings and make comparisons. Plus, after sampling each offering, you can go to the 24 Days of Rum website and find additional details about each of the producing rum companies and their rum.

The package is a treat in and of itself; black with silver lettering and just enough information to make you want to open it immediately. Inside you will find 2 compartments at the top of the box with the tasting glasses and 24 numbered compartments below containing the rum samples. Also inside – two tasting books. It’s almost like a private rum class in a box!

1423 has released a new 24 Days of Rum Calendar for the last several years; each new release features a different assortment of rums. 1423 World Class Spirits is based in Denmark, so it is already available in many European countries, but this year marks its first venture into the US markets. Originally, I’m told, it will be available at Lee’s Liquor Stores in Nevada by the end of October with a retail price of $99 – $109. As we hear of additional US and Canadian distribution outlets, we’ll update the information here.

Everything from the concept to the packaging in the 24 Days of Rum Original Rum Calendar is first class and is sure to delight anyone who loves rum, from connoisseur’s to those who just want to explore the delicious spirit.

ARÔME True Rum 28

We were recently invited to taste a very special rum, ARÔME True Rum 28. As we were not familiar with the name, we did a little research prior to our tasting and found that this luxurious rum is produced in Panama under the guidance of a rum mastero with over 50 years of experience making Cuban style rums and it had been awarded a Double Gold Award at the San Francisco World Spirit Awards in 2018. Additionally, ARÔME 28 has been aged for no less than 28 years in white oak casks formerly used to age Kentucky bourbon, and is a very limited edition.

The bottle and outer packaging were extraordinary – a white hand stitched box with an embossed leather label. The appearance of the box was quite luxurious and was a worthy container for the simple, but elegantly curved glass bottle with a black label and gold embossed lettering. The color of the rum in the bottle was deep and inviting.

We poured a sample, neat, and studied the nose. The aroma was one of the best we’d experienced (perhaps why it’s named ARÔME?) and we anticipated the taste would be equal, or perhaps even better (if that was possible), than the aroma. Once we forced ourselve to stop sniffing the deliciousness, we took our first taste. It certainly did not disappoint! A beautiful balance of spices and flavors that was not too sweet and an incredible smoothness from start to finish.

As mentioned previously, ARÔME 28 has been produced in a very limited edition and can be purchased at these fine shops according to their website. The price is indicative of a very fine rum ($500+ per bottle), so this is one for rum collectors and those that appreciate a limited edition, luxurious rum. In our opinion, ARÔME 28 would be one that is reserved for the most important occasions and shared only with those that really appreciate a fine rum. Use your best rum glasses for this one and try it neat so you can appreciate the excellent aroma and velvety smoothness.

Rum Experiences on the Island of Puerto Rico

The rum capital of the world. That’s what Puerto Rico touts itself in its “Rums of Puerto Rico” campaign. We’ve had the pleasure of visiting Puerto Rico on several occasions, but we decided to return to the island recently to explore its world of rum.

We did a little research prior to our visit and found that the rum brands produced in PR include Bacardi (which actually started in Cuba), Don Q, Ron del Barrilito, Caliche, Club Caribe and Trigo Reserva Añeja. Two we had heard of prior to our visit (who hasn’t heard of Bacardi?), but the others were new to us. We also learned that there are several characteristics that Puerto Rican rums must have to be granted that approving seal of quality. Those signature distinctions are high quality molasses, a continuous distillation process, aged for a minimum of one year in a white-oak barrel, and it must be produced in Puerto Rico. We were ready to start our rum journey, and off we flew to San Juan to begin our week of rum, relaxation and research.

I must admit, this type of “research” is quite enjoyable. We fit as much as we could into our week on-island and from that time, we compiled this list of suggested Rum Experiences on the Island of Puerto Rico. We will no doubt add more to the list after subsequent PR visits!

  • A visit to the Ron del Barrilito Visitor Center. They have just begun giving tours in their facility in Bayamón. A very good rum (we’re fans of the Three Star), and they recently started three tours; a Heritage Tour, a Mixology Tour and a Tasting Tour. Find out more about the tours here.
  • Take the Rum Runners Craft Cocktail Tour. This 2 hour craft cocktail walking tour will take you through the cobblestone streets of Old San Juan to some of the best watering holes in town to sample 3 different cocktails crafted by local mixologists. Learn fun facts about the origins and backstories of the spirit that shaped Puerto Rico while enjoying the evening with a small group of rum lovers, like you! Find out more about this tour here.

  • Order a Piña Colada at Barrachina’s in Old San Juan. Barrachina’s is purported to be the birthplace of the Piña Colada where Don Ramon Portas Mingot created what became the world famous creamy rum drink in 1963. Although the drink is pre-mixed (perhaps as a time saver due to the large amount of them ordered), it’s fun to sit at the bar in the outside courtyard, enjoying the ambiance and chatting rum with the friendly bartenders.

  • Head on over to Casa Melaza in Old San Juan and learn all about Puerto Rican Rums by participating in one of their daily rum tastings. It’s a great way to sample several Puerto Rican Rums to find out which is your favorite before buying a bottle. Find out more about Casa Melaza’s Rum Tastings here.

  • Visit the Luquillo Kiosks to sample local food and drink at the series of local eateries. Although not the fanciest of establishments (it’s basically a series of kiosks!), you can find some delicious and authentic Puerto Rican cuisine and beverages. We enjoyed a Piña Colada from one of the kiosks as well as a tasty Mojito from the Mojiito Lab and some local dishes all enjoyed by the beach. It was an enjoyable afternoon after exploring the rainforest.

  • And last, but certainly not least, The Bacardi Tour. The Bacardi brand of rums is probably one of the best known brands in the world and although some discount it due to its mass production, Bacardi does have a few delicious premium rums in addition to its very popular mixing rums. At its tour location, Casa Bacardi, across the bay from Old San Juan, there is a choice of three experiences: the historical tour, the rum tasting tour and a mixology class. We participated in the historical tour many years ago and found it to be informative about the brand and its history – and of course enjoyed the cocktail served at the outdoor Bat Bar Pavilion. St. Nicholas Abbey Rum Experience Tour, Barbados

If you’re a rum lover, there are plenty of opportunities to enjoy fantastic rums on the beautiful island of Barbados. We’ve traveled many places in the Caribbean, but we felt like we were in rum heaven during our time on the island!

We had a list of distilleries to experience and St. Nicholas Abbey was certainly one of them. Their small batch rum is highly rated and currently only available for purchase at the distillery (and a few select online retailers). Located on the lush northeast side of the island, St. Nicholas Abbey offers tours that include a walk through a beautiful Jacobean mansion that dates back to 1658 – one of the few left in the Western hemishpere, the sugar plantation, and the rum distillery – including a rum tasting.

We rented a car for our time on Barbados and aside from finding ourselves hopelessly lost in Bridgetown a few times (a big thank you to the kind residents that helped us find our way), we were glad we had the flexibility to explore a lot of the island. The drive to St. Nicholas Abbey was a pretty drive, albeit a little challenging to find due to a conspicous lack of signage on the entire island. Once we got our bearings, we started to notice rolling fields of sugarcane dotted with homes and farms. As we approached St. Nicholas Abbey, a mischievous pair of monkeys ran across the road, jumping into a tree next to the road and watched as we passed.

Finally spotting a sign for St. Nicholas Abbey, we turned on to the long entry lined with Mahogany trees creating a canopy over us. We parked and strolled up to the mansion.

We were just in time to join a tour, payed our entrance fee – Adults (13 and over): BBD $45, US $23, and joined the tour of the mansion, which was fascinating in its entirety, but we were especially amused by “the crapper”.

Next, we were taken to a beautiful shaded area between the mansion and rum tour where we were treated to a glass of rum punch.

We then viewed a short historical movie taken by the grandfather of the owner as the family left Europe and made their way to to Barbados by ship in the 1930’s and their early years in Barbados. The short movie was fascinating and gave us some insight into the beginnings of St. Nicholas Abbey.

Then, it was time to taste the rum. Simon Warren, son of owners Larry & Anna Warren who purchased St. Nicholas Abbey in 2006 in order to preserve it as a part of the island’s rich heritage, gave an informative tasting, injected with his signature dry humor, and included samples of both their award winning white rum and their 5 year old rum – made from their white rum and aged in old bourbon barrels that previously contained their longer aged molasses rums. We really enjoyed both. A sip of their 12 year molasses based rum, created from a rum base purchased from another Barbados distillery, Foursquare, to help launch the St. Nicholas Abbey aged rums, put us over the top.

We knew we had to take some home and purchased the 5 and 12 year, both in beautiful etched bottles that are in themselves works of art. They offer free engraving, so we had our 12 year bottle engraved.

After chatting a while with Simon, who is extremely personable and
knowledgeable about rum and the distilling process, we strolled through the expansive plantation, stopping to visit the small bottling house and then Annabelle, their copper hybrid pot/column still!

As if all of that isn’t enough to make you want to visit St. Nicholas Abbey on your next trip to Barbados, a new attraction just opened; The Nicholas Abbey Heritage Railway – an exciting family attraction now part of St. Nicholas Abbey Great House Plantation and Distillery. It’s a steam locomotive journey through the plantation fields and mahogany woods culminating with the expansive highland view of the east coast of the island from Cherry Tree Hill. We really enjoyed our time at St. Nicholas Abbey. Once we run out of our current stock of St. Nicholas Abbey rum, we’ll have to go back to re-stock, chat with Simon some more and check out the new train ride. Cheers!

Siesta Key Rum Distillery Tour

Troy Roberts is a man after our own heart. He grew up in beautiful Sarasota, Florida, eventually venturing out into the world to find his passion, but during his time away, he would dream of sitting on the beach in Sarasota, watching the sun set with a rum in hand.

Eventually he heeded the pull back to a life on the beach, sold his business and headed back to Sarasota, where he bought a still and started a journey that would soon lead to the creation of the award-winning Siesta Key Rums.

Troy started Siesta Key Rum in 2007 under Drum Circle Distilling (named after an interesting eventthat occurs every Sunday evening on Siesta Key Beach to welcome what can be a mind-blowing sunset). He released his first rum, Siesta Key Silver in 2010. With the help of two close friends, his hard-working father (apparently he works for rum!) and his beautiful wife Nanci, Troy is now creating a line of amazing rums that have received, and continue to receive numerous awards and accolades.

When asked about the learning curve for creating a good rum, Troy said that it was quite a process. He tried every yeast, every molasses and every natural flavor that he could find before settling on the perfect combination for each of his rums. He continues to do the same thing with each new rum he creates. In addition to the silver rum – which is really so good that it can be sipped on its own, Siesta Key produces several other rums that are also available in the tasting room at the distillery: a gold rum, a spiced rum and a toasted coconut rum.

Both the spiced rum and the toasted coconut rum are fantastic; hand-crafted in small batches by infusing rum with fresh spices and actual toasted coconut. Troy doesn’t use any artificial flavors or sweeteners in any of his rums and you can absolutely taste the difference.

Two other rums produced by Siesta Key are rather hard to procure. Distiller’s Reserve Spiced is created using a traditional solera process. Troy initially created this rum for his own enjoyment but friends and family liked it so much that he had to start making more. A limited number of bottles of Distiller’s Reserve Spiced are available at the end of September each year and sell out quickly. Distiller’s Reserve Spiced is only available at the Siesta Key Rum Distillery and if you follow them on Facebook, you can get updates on the release date.

We were treated to a special taste of this years batch of Distillers Reserve during our visit as Troy kindly poured off a sample from one of the barrels. The natural spices, honey and Florida sugar cane combine to create a truly delicious rum experience – no wonder it sells out so quickly!

Additionally, The Siesta Key family has started a new trend in the rum business – a rum that is aged in beer barrels called the limited edition Beer Barrel Finish Spiced Rum. Interesting, to say the least, each batch of this rum is different depending on the beer barrels available. We really enjoyed sampling this creative rum as well. Limited amounts of the Beer Barrel Finish Spiced Rum are sold in the Tasting Room when available.


Siesta Key Rum
With all of the awards and word-of-mouth advertising from happy customers, the demand for Siesta Key Rum is growing. It is pretty widely available across Florida, is available through many Total Wine Stores nationwide and can be shipped to some locations by Broudy’s. When asked about the plans for the future of Siesta Key Rum, Troy paused a moment and said, “The growth is exciting, but that’s a balance we continue to work on”. The desire to continue to produce an artisan rum, experiment with different flavors and ideas, increase production to meet the demand and still have some free time to enjoy it is an important balance for the team.

There are weekly tours that you can take at the distillery at 2212 Industrial Blvd. in Sarasota.
