Hummingbird

Recently a few of our readers asked if we had a recipe for a Hummingbird – a frozen rum cocktail that they enjoyed while vacationing in Jamaica. We hadn’t, but it sounded interesting, so we started searching for one. We ran across several of them – all slightly different and then made just a few small adjustments of our own. So – here’s our version of the Hummingbird. Sorry we can’t provide the beautiful Jamaican beach to go with it!

Hummingbird

Course: Drinks
Servings: 2

Ingredients

  • 1 oz. Gold Rum (we used Appleton)
  • 1 oz. Rum Cream
  • 1 oz. Coffee Flavored Liqueur
  • 1 oz. Cream
  • 2 Strawberries
  • 1/2 Banana
  • 1 1/2 c. Crushed Ice

Instructions

  • Add everything but the ice to a blender and mix.
  • Add the ice and blend until smooth and frothy.
  • Pour into a glass and garnish with a slice of banana and a strawberry, if desired.

Poppin’ Strawberry Colada

We wanted to post this one sooner, but finding pop rocks turned out to be quite the feat! We thought this might be a good recipe for the holiday weekend – festive, cold and rummy – and with a little sizzle and pop! This can easily be made without rum for the “yung uns” and designated drivers! Be safe and enjoy!

Poppin' Strawberry Colada

Servings: 2

Ingredients

Instructions

  • Blend rum, pineapple juice, strawberries and coconut cream until smooth.
  • Add ice and blend until creamy.
  • Dip the rim of two small glasses in a small bowl of pineapple juice, then dip in pop rocks (put the pop rocks on a plate for easier access). The rocks will begin to pop as soon as they get wet, but there is still some residual popping to enjoy as you sip! 
  • Add a garnish of blueberries for color. Cheers!

Dark Mojito

Here’s another one to add to your Mojito Recipe Files – a Dark Mojito. It’s truly just a slight variation of The Perfect Mojito and a Dirty Mojito and in our opinion, tastes the rummiest of the three! Use a dark rum with a taste that you find pleasant, as the dark rum taste does rise above the milder taste of mint and sugar.

Dark Mojito

A slight variation on the Mojito, very "rummy"!

Ingredients

Instructions

  • Gently muddle the mint with the lime juice and brown sugar in a tall glass.
  • Add crushed ice and the rum.
  • Fill to the top of the glass with club soda. Garnish with a sprig of mint and enjoy!!

Pineapple & Rum Sorbet

Pineapple Rum Sorbet – perfect treat for the warm and lazy days of summer! We used an ice cream maker to mix our batch up, but if you don’t have one, just put the mix in a freezer safe container, freeze overnight, then re-mix in the blender and freeze a little longer. Easy and delicious!

Pineapple Rum Sorbet

Pineapple & Rum Sorbet
(makes 4-6 servings)

1/4 c. gold rum
1 c. water
1 c. sugar
1 fresh, ripe pineapple

Peel and core the pineapple. Cut into chunks and place in a blender. Pour the rum in the blender. Heat water and sugar on the stove until the sugar melts. Cool, then add to the blender. Blend all ingredients just slightly – it’s ok to have small chunks of pineapple (in fact, we prefer it!) Using an ice cream maker (or the method above) freeze the mix. Garnish with pineapple and enjoy.

Lemon Pomegranate Fizz

Light and refreshing and not too sweet – the perfect summer rum drink! Play with the ratio to make it just right for you. More pomegranate juice or lemon juice to increase the tartness, more lemon lime soda to increase the sweetness, or use diet lemon lime soda if you want to cut back on the calories! Ahhh…enjoy!

Lemon Pomegranate Rum Fizz

Light and refreshing and not too sweet – the perfect summer rum drink!

Ingredients

Instructions

  • Add rum, pomegranate juice and lemon juice to an ice filled cocktail shaker.
  • Shake lightly and pour in a short cocktail glass over crushed ice.
  • Add lemon lime soda to fill to the top. Garnish with a slice of lemon.

Rumaggedon

We enjoyed a week long sail through the Grenadines last year on the tall ship Diamant with Island Windjammers and in addition to the great itinerary (read about the trip here: Island Windjammer Cruise) we absolutely loved happy hour. Most evenings we were served up the scrumptious Rum Swizzles that the Diamant is famous for, but on the last evening aboard, they pulled out the stops and served up another excellent rum drink called the “Rumaggedon”. Even with some intense prying, o.k – maybe even a little whining,  our bartender Brandon would not divulge the yummy recipe. Imagine our surprise when we found that Island Windjammers posted the Rumaggedon recipe on their Facebook page today! I’m sure these are the tastiest when enjoyed during happy hour on board the Diamant or Sagitta, but maybe you can mix up a batch, close your eyes and start imagining your next sail!

Rumaggedon
(recipe: Island Windjammers)

2 parts dark rum
2 parts orange juice
1 part mango juice
1 part guava and/or passion fruit juice
1-2 dashes of bitters
top with grated nutmeg and cinnamon
garnish with orange wheel (or a cherry and umbrella!)

Shake, pour over ice, sprinkle with grated nutmeg and cinnamon, garnish and enjoy!

Watermelon Rum Freeze

Looking for a cold and refreshing treat for summer? This Watermelon Rum Freeze might just do the trick. Cold, refreshing and fruity – with a punch of rum of course! Make it in large batches and store it in the refrigerator for a cold summer party beverage!

Watermelon Rum Freeze

Cold, refreshing and fruity – with a punch of rum of course! Make it in large batches and store it in the refrigerator for a cold summer party beverage!
Servings: 9

Ingredients

  • 3 cups Ripe, Seedless Watermelon
  • 1 1/2 liters Lemon Lime Soda (diet can also be used)
  • 6 oz. Frozen Lemonade Concentrate
  • 1/2 750 ml bottle White Rum

Instructions

  • Slightly blend watermelon on low in a blender (it’s ok if there are small chunks).
  • In a very large bowl, add all ingredients and stir.
  • Clean out the blender and set it on a flat surface, such as a counter. Put one of the gallon bags on the inside and pour in mix until 1/2 to 3/4 full, then remove bag and close tightly. Repeat with the other bag. 
  • Put bags in the freezer for 12-24 hours.
  • Spoon into glasses and garnish with watermelon balls and mint.

BBC-Bailey’s Banana Colada

BBC – Bailey’s, Banana Colada, I think. We’ve enjoyed several BBC’s while on vacation, but whenever you ask what BBC stands for, you get a different description – usually involving the C. Some say coconut, some say colada, but we say, whatever it is, it’s GOOD.

We tried several different recipes, but played around a little with them and came up with one that we really like. Here it is – enjoy!!

BBC - Bailey's Banana Colada

A delicious and creamy blend of banana and banana rum, Bailey's, coconut creme and dark rum.

Ingredients

  • 1 oz. Bailey’s Irish Cream
  • 1 oz. Banana Rum (we use Cruzan or banana liqueur)
  • 1 oz. Coconut Cream
  • 2 oz. Dark Rum
  • 1 Banana
  • Chocolate Syrup
  • 1 to 1-1/2 c. Ice

Instructions

  • Blend all ingredients (except the chocolate syrup) in a blender and blend until smooth. Drizzle a little chocolate syrup around the inside of a martini glass, then pour the blended mix slowly in the center of the glass.

Rum Margarita Recipes

Need a Margarita recipe using rum for Cinco de Mayo or National Margarita Day? Si, si – we did too, so we experimented a little and came up with these two. With the rum, the taste  resembles a daiquiri, but with not a lot of added sugar, it’s not as sweet and you get the nice margarita tartness. Mmmm – Salud!

Classic Rum Margarita

Servings: 1

Ingredients

Instructions

  • Rub the edge of a margarita glass with a slice of lime then dip the edge in the margarita salt to lightly coat.
  • Shake all ingredients over ice then pour over crushed ice in the glass.
  • Garnish with a lime.

Strawberry Rum Margarita

Servings: 1

Ingredients

  • 2 oz. Light Rum
  • 5 large Strawberries (plus one extra for garnish)
  • 1 oz. Rosie's Lime Juice
  • Splash Simple Syrup
  • 1 c. Ice
  • 1 tbsp. Sugar or Raw Sugar

Instructions

  • Rub the edge of a margarita glass with a slice of lime, then dip in sugar or raw sugar.
  • Put all ingredients in a blender and blend until smooth and creamy.
  • Pour into the margarita glass and garnish with a strawberry.

Strawberry Infused Rum

We love cocktail recipes that combine berries and rum – especially strawberries, so we thought we’d try to make a batch of our own strawberry rum to use in some of our favorite strawberry + rum recipes.

The hardest thing about infusing rums is having the patience to let the process work. This one is no different. It takes between 2 weeks and a month to get the desired “strawberryness” so be prepared to wait a while to sample your creation – but, it’s worth it!

Strawberry Infused Rum
Slice about 3 cups of fresh, ripe strawberries and put them in a clean jar that can be tightly sealed. Add enough light rum (we used Bacardi) to cover the strawberries plus about an inch and seal. Store the jar in a cool, dark place and gently shake once a day.

Test your infusion after about 2 weeks and if the taste is not as strong as desired, seal it back up and wait another week. Once happy with your results, use in your favorite strawberry rum cocktail recipes!
