Light & Minty Cran Rum

Like the taste of tart and tangy cranberry? If so, you might enjoy the taste of this easy, light and refreshing cocktail. No sugar added to this one, so it’s not an overly sweet combination. I love the addition of the mint which adds a bit of freshness to the mix.

If you like your cranberry a little sweeter, you might try our Cranberry Mojito recipe which adds a little brown sugar to tame the tang just a bit. Or, just add a drop of Stevia or a splash of a lemon lime soda!

Jamaican Me Crazy

We posted two recipe variations for the drink Jamaican Smile a while back, but recently were asked for a recipe for a drink called Jamaican Me Crazy. Happy to oblige, we did some research and came up with the following.  This one packs a punch with 2 shots of rum and 1 shot liqueur in each serving  but delivers a smooth tropical vibe with the banana liqueur and coconut rum…yum…
One of these could surely make-a-me-crazy…

Rum Glazed Caramel Corn

OMG. While perusing delicious things to try, we ran across a recipe for Rum “Spiked” Carmel Corn from the website Rachel Cooks. She had adapted the recipe from another that used whiskey. As we read on, we loved her rational on using rum instead of whiskey by saying, “Whenever I have anything that tastes like rum, I’m reminded of my honeymoon in Jamaica.” (sounds like someone enjoyed a little Rum Therapy in Jamaica!) We set out to make it and followed her directions pretty closely. She commented that, “If you’ve never made caramel, you’ll think you screwed this up. I did. It gets sort of dry-ish before it melts. Just keep stirring. Good things will happen.”

It did. And now I’m trying to wait until a party on Sunday to gobble the rest up…

Rum Glazed Caramel Corn
(adapted from Rachel Cooks)

1/2 cup unpopped corn
3 cups of granulated white sugar
1/4 cup dark rum (such as Myers’s)
3 Tbsp unsalted butter
1 Tbsp pure vanilla extract
1.5 tsp salt
1.5 tsp baking soda

1. Pop the popcorn with an air popper or on the stove with oil. Place popped popcorn in a large bowl.

2. Cover one to two sheet pans with aluminum foil.

3. In a large saucepan, combine sugar, rum, butter, vanilla, and salt. Heat over medium heat, stirring very often. (See Rachel’s note above – just keep stirring – it gets dry-ish looking before it melts and looks like you’ve screwed things up!)  Continue to cook until sugar melts and caramel becomes a dark caramel color. I takes about 15-20 minutes. Once it melts and turns a dark caramel color, act fast because it scorches quickly.

4. Add the baking soda and keep stirring. Be careful as it bubbles up quickly and almost doubles in quantity. Quickly remove from heat, pour over the popcorn and stir quickly to coat all the corn.

5. Spread the caramel corn out on foil lined sheet pans and allow to cool at least ten minutes before digging in.

Note: The only problem we had was that we had ALOT more caramel than needed to cover the popped corn. Next time, and there will certainly be a next time (this stuff is awesome!) we’ll just pop more popcorn. No reason to let good caramel go to waste…. Enjoy!

Hot Buttered Rum

Hot Buttered Rum –  a tasty and warming treat on ultra-cold winter days. I must admit, I’d much rather be drinking a cold rum drink on a warm beach somewhere, but hey, for those of us that live in colder climes, this rich rum concoction will warm you all the way down to your frosty toes.

Hot Buttered Rum

A tasty and warming treat on ultra-cold winter days.
Course: Drinks
Servings: 1

Ingredients

  • 1 1/2 oz. Aged or Dark Rum (we used Cruzan Blackstrap)
  • 1 Tbs. Honey
  • 1 Tbs. Butter
  • Hot Water

Instructions

  • Put rum and honey in a mug.
  • Fill with hot water and float the butter on top.
  • Stir gently as butter melts.
  • Use a cinnamon stick or nutmeg for a delicious garnish.

Pumpkin Rum Pie


Pumpkin Rum Pie
Dark rum adds just a little more pizzazz to this traditional holiday treat. Mmmm….I may want to skip the mashed potatoes and have an extra slice of this!

Pumpkin Rum Pie

Ingredients

Pie Filling

Pie Crust

  • 1 frozen or premade pie crust

Rum Flavored Whipped Cream

Instructions

  • Preheat oven to 375°F.
  • Prepare the pie crust according to its instructions.
  • Mix (by hand) together pumpkin puree, sugar, molasses, rum and pumpkin pie spice. Add eggs, stir in half-and-half.
  • Pour filling into pie crust – don’t fill too full.
  • Bake for 25 minutes and check to be sure the crust is not getting too brown. If at any point it does, you may have to cover just the crust with foil.
  • Bake for another 20 to 25 minutes or until a knife inserted in the center comes out clean.
  • Let cool at least an hour, then cover and refrigerate.
  • Whip the cream, gently mix in powdered sugar and rum. Add just a little more powdered sugar if needed for consistency.
  • Serve with a dollop of Rum Flavored Whipped Cream and a sprinkle of cinnamon.

Pumpkin Spiced Rum Cocktail

We loved the taste of the Pumpkin and Spiced Rum Cupcakes so much that we thought we’d explore the taste combination in a cocktail. We tried a few with less then stellar results but after one sip of this one, we knew we had a winner! The rich, creamy, pumkiny taste makes it a perfect desert drink and will certainly put you in the holiday spirit! Happy Thanksgiving!

Pear Mojitos

Mmmm…pears. One of my favorite winter fruits. In our quest to make mojitos out of, well, everything, we tried making a mojito with pears. I couldn’t imagine what the combination of pears and mint would taste like, but, well, it’s tasty! You could make your own pear nectar by putting some soft pears in a food processor and then straining them, but we took the easy route and purchased pear nectar. Enjoy!

Pear Mojito

I couldn’t imagine what the combination of pears and mint would taste like, but, well, it’s tasty!

  • Gently muddle together the mint leave and simple syrup.
  • Add lime juice, pear nectar and rum and stir.
  • Pour into a glass filled with ice and top off with club soda. Garnish with mint and a slice of pear.

Walk the Plank

Argggg! Today is International Talk Like a Pirate Day so we thought we’d post a rum drink recipe worthy of a Pirate’s Happy Arrr – ’cause Rum Therapy Cures What Ails Ye! We found several versions of this drink on the web, but thought this one from drinksmixer.com sounded the best with a slight adaptation. It’s strong and easy to make – so enjoy ye scallywags!

Walk the Plank

(makes one)

1 oz Captain Morgan Spiced Rum
1 oz Malibu Coconut Rum
1 oz RedRum (rum infused with mango, pineapple, coconut and cherry)
7 – Up Soda
2  cherries

Pour rums over ice. Fill with 7-Up. Stir. Garnish with cherries. Float a teaspoon of cherry juice on the top.

Green Tea Mojito

A healthy Mojito? Well, this one DOES contain green tea and can be made sugar-free, so if you need to keep it light, this is one to try! I ran across a recipe recently on the website Skinnytaste, for an Iced Green Tea Mojito. Always on the lookout for new mojito recipes, we whipped up a batch. We used Stevia as a sweetener to keep the sugar content and calories low, but you could also use raw sugar or agave syrup. Although not my favorite mojito recipe (the Perfect Mojito can’t be beat in my opinion!), it is light, sugar free (when Stevia is used) and refreshing and includes the antioxidant green tea!

Green Tea Mojito

Ingredients

  • 1 tbsp Fresh Lime Juice
  • 6 Mint Leaves
  • 1/2 to 1 packet Stevia (Stevia can be quite sweet, so start with just 1/2 packet and adjust to taste)
  • 1/2 c Brewed Green Tea (chilled)
  • 1 - 1/2 oz White Rum

Instructions

  • Muddle the lime juice, mint and Stevia. 
  • Add ice until glass is about 3/4 full and then pour in rum and green tea.
  • Stir and garnish with mint leaves.

Frozen Mojito

The perfect mojito... only colder!

  • Muddle mint, sugar and lime in a glass. Add rum and club soda and stir gently.
  • Strain out the mint leaves – unless you don’t mind a green drink – and pour the mixture into a blender.
  • Add 1 cup ice and blend ’till frosty and smooth.
  • Garnish with mint leaves and lime slices, and enjoy!!
