Pink Lemonade Mojito

Could it be? Is summer finally here? If so – it may be time to break out some refreshing summer rum drinks and this one would certainly fit that category. For this recipe, use cranberry juice, pomegranate juice, strawberry puree, cherry juice or grenadine to give the cocktail a light pink hue and delicious taste. Ahhh…such a refreshing summertime cooler!

Pink Lemonade Mojito

Ahhh…such a refreshing summertime cooler!

Ingredients

Instructions

  • Roll the lemon with your hand on a flat surface, juice, then reserve 1/4 peel.
  • In a tall glass, add rum, mint, lemon peel and simple syrup and gently muddle.
  • Fill glass with ice, then add strawberry puree, and the lemon juice and top it off with club soda. Stir slightly.
  • Garnish with a lemon slice and some mint leaves.

Notes

Cranberry juice, pomegranate juice, cherry juice or grenadine can be substituted for the strawberry puree. Depending on the red juice you use, you may need to add a little more or less simple syrup to taste.

Pineapple Rum Punch

This recipe makes a tropical concoction that will have you daydreaming of swinging in a hammock on a beautiful beach. Light, tasty and easy with just a bit of effervescence – tropically delicious!

Don’t like coconut so much? No problem – it tastes great with a nice gold rum instead of the coconut rum. Don’t know why it took us so long to give this one a try  but it’ll surely be one we’ll put together again and again. Cheers!

Pineapple Rum Punch

Ingredients

  • 1 cup ginger ale
  • 1 cup pineapple juice
  • 1/3 cup coconut rum (we used Blue Chair Bay)
  • cracked ice
  • pineapple chunks for garnish (fresh, if at all possible)

Instructions

  • Mix the ginger ale, pineapple juice and rum together and pour in glasses over cracked ice.
  • Garnish with chunks of fresh pineapple and if you really want to go wild, add a little freshly grated nutmeg!

Jack Frost Cocktail

Touted as the winter version of the Piña Colada on Homemade Hooplah, we thought we needed to give this one a try. Yes, we’d rather be sipping a Piña Colada in the middle of the summer or on a beautiful tropical beach somewhere, but the weather outside is decidedly non-tropical at the moment. So, either we whine about it until the warmth returns (actually, I probably will anyway), or try and make the best of it. After one (or two) of these, we might not notice the cold as much…

This is a sweet drink. If you like less sweetness, try cutting the coconut crème in half and replacing with coconut milk.

  • Put a little coconut crème on a plate, then dip the very edges of the glasses in the crème.
  • Spread a couple teaspoons of shredded coconut on another plate and dip the edges in the coconut.
  • In a blender, mix the pineapple juice, rum, blue curacao and ice until smooth. Pour into the glasses and serve. Cheers!

Apple Cider with Spiced Rum

Ahhh…warm apple cider on a cool autumn evening. Makes cold weather almost tolerable.

Ingredients

Instructions

  • Peel and cut the apple in small chunks.
  • Heat the apple juice, cinnamon, nutmeg, and apple chunks over medium heat until spices are blended and apple juice is warm.
  • Pour in the rum and slowly stir until warm.
  • Pour the mixture into mugs.
  • Add a dollop of whipped cream drizzled with caramel sauce if desired, then garnish with a cinnamon stick and a sprinkle of nutmeg.

  • Fill the glass with ice, add 4-5 oz ginger beer and top with the rum.

Exuma Blue Lemonade

Have you ever tried an Electric Lemonade? An Exuma Blue Lemonade is similar to an Electric Lemonade except we substituted rum for the vodka and added a bit more sweet and sour mix for a slightly tarter taste. The color was so clear and blue that it reminded us of the beautiful water around Exuma, so we re-named the new rum version Exuma Blue.

Easy and really refreshing, this would be a good recipe to make in a larger batch!

Exuma Blue Lemonade

Easy and really refreshing, this would be a good recipe to make in a larger batch!

  • In a shaker, add the rum, blue Curaçao, and sweet and sour mix. Shake gently, then pour in a short glass with ice.
  • Fill to the top with the lemon lime soda. Garnish with a lime slice and a cherry.

Tropical Depression Drink

We recently saw a Tropical Drink Recipe said to be served at the beautiful Scrub Island Resort in the BVI and thought we’d give it a try. We made our own mango and strawberry purées by thawing frozen mango and frozen strawberries (be sure to keep the juice as it thaws) and then throwing it in the blender until liquefied. We opted not to add any sugar to the mix, thinking the fruit would be sweet enough and were happy with the results.

Be sure not to add too much ice as you are blend everything together. We started with about 1/4 c. and added a piece or two more. If the mixture is too thick, add a splash or two of lemon lime soda or Ginger Ale and stir.

The recipe called for a garnish of toasted coconut, which we didn’t have on hand, but I’m sure it would compliment the taste quite well. Other options would be a sprinkle of freshly ground nutmeg or a dark rum floater.

Tropical Depression

Ingredients

  • 2 oz Mango Purée
  • 2 oz Strawberry purée
  • 1 oz Dark Rum (we used Gosling's Black Seal Rum)
  • 1 oz Triple Sec
  • 1 oz Amaretto
  • 1 oz Coconut Creme (we used unsweetened Coconut Creme. If you like your drinks sweeter, you can use sweetened Coconut Creme or Creme of Coconut)
  • 1/4 c Ice
  • Toasted coconut, pineapple and maraschino cherries (for garnish)

Instructions

  • Blend all ingredients with ice until smooth. 
  • Pour into a rocks glass and garnish with toasted coconut, pineapple and maraschino cherries.

Coconut Rum Punch

We’re big fans of rum punch – all kinds, made with fruit juices or fruit and different rums. Such an easy drink to change up and play with different combinations of flavors. We ran across this Coconut Rum Punch recipe by Kimberly of A Night Owl on Pinterest, and were initially attracted by the delicious looking picture, but after putting it together, the taste is equally delicious! We made a smaller version of the recipe than originally posted (we didn’t want to waste any!), but you can easily double it for adult get-togethers!

Coconut Rum Punch

  • Mix together the coconut rum, orange juice, pineapple juice and ginger ale.
  • Pour over ice in tall glasses.
  • Slowly add equal parts grenadine to each glass.
  • The grenadine will sink to the bottom creating a beautiful looking drink. Garnish with a skewer of maraschinos add a biodegradable straw and enjoy!

Dark ‘N Stormy Ice Cream

If you’re on a diet, you might as well just close this page right now. We could practically feel our clothes getting tighter just reading the list of ingredients, but we forged ahead. You know this job requires some sacrifices in the name of “rum research”.

Anyway, we saw this recipe posted by Gosling’s Rum the other day, and being big fans on their Dark ‘N Stormy Drink, we knew we had to give it a whirl.

There are a few steps to it, and we modified the steps just slightly to make it a bit easier (and to use a few less pots and pans) and the results were still, well, rumlicious. And, as if the ice cream isn’t rich enough by itself, we decided to make a rum sauce (find our rum sauce recipe after the ice cream recipe) and drizzle it over the ice cream before serving…seriously yum.

Oh, and if you don’t want to go through all the steps to make the ice cream from scratch, Goslings recommends “buying some of the best vanilla ice cream you can find to soften. Add chopped crystalized ginger and Gosling’s Black Seal Rum and blend it all in. Re-freeze and serve when ready.” Hmmm. Maybe we’ll try it that way too!

Dark 'N Stormy Ice Cream

Delicious, creamy and spiked! Not diet friendly, but SUPER rumlicious!

Servings: 1 quart

Ingredients

For the Ice Cream

  • 1 c. Sugar
  • 2 c. Milk
  • 2 c. Heavy Cream
  • 8 Egg Yolks (Large)
  • 1/2 c. Gosling's Black Seal Rum
  • 1/2 c. Crystalized Ginger (chopped fine)

For the Rum Sauce

Instructions

To make the Ice Cream:

  • In a saucepan combine the sugar, the milk, and the cream and scald the mixture over moderate heat, stirring.
  • In a large bowl beat the egg yolks until they are light and thick and pour in the milk mixture through a fine sieve in a stream, stirring.
  • Cook the mixture moderate heat, stirring, until it coats the spoon. Transfer the custard to a metal bowl set in a bowl of ice and stir until it is cool.
  • In a small stainless steel or enameled saucepan reduce the Black Seal Rum over moderately high heat by half, taking care it does not ignite. Allow it to cool.
  • Stir the Black Seal Rum and the crystalized ginger into the custard and chill the mixture, covered, for 2 hours.
  • Pour into an ice cream maker to finish chilling and mixing.

To make the Rum Sauce:

  • Melt butter in a saucepan over low heat. Add brown sugar and stir until dissolved.
  • Turn off the heat, but leave the saucepan on the stove. Slowly and carefully pour in the rum, stir until it thickens slightly.
  • Using a small spoon, drizzle over a bowl of ice cream.
