Pineapple Mojito

Pineapple and rum are frequently paired together. Think of the popular Caribbean rum drink, Bahama Mama, or a Painkiller, or perhaps a Caribbean Rum Punch. The combination of pineapple and a good rum make for a decidedly tropical tasting beverage.

We’ve always been fans of a good Perfect Mojito, and have been known to post a mojito variation or two (check out this Pear Mojito, Mango Mojito or Zesty Orange Mojito), so it was only natural to try a Pineapple Mojito. It took a try or two to figure out the best combination, but we think you’ll enjoy this recipe. Cheers!

Pineapple Mojito

Ingredients

Instructions

  • Add mint, brown sugar and lime juice to a tall glass and gently muddle to release the mint.
  • Add the rum and pineapple juice and gently stir.
  • Add ice, then top off with club soda.
  • Garnish with chunks of pineapple.

Sparkling Coconut Mojito

Ahhh… summer. Love the hot days and icy cold drinks!

We’ve been asked lately to post some lower cal drinks, or drinks that are Keto friendly and we thought of this one while sipping a Coconut La Croix Sparkling Water over ice.

When putting this drink together, we did a little research and found that although an unflavored rum contains nearly zero carbs, that was not necessarily true for flavored rums. In looking them up, coconut rums can vary in carb content from zero to a fair amount of carbs per serving, probably depending on if the flavor is infused or added with a liqueur. If you are counting carbs, please do your own research to make sure you are adding a low carb variety. If counting calories, the majority of calories come from the rum(s) which are at least 65 calories per ounce, but because the majority of the liquid is from the La Croix Coconut Sparkling Water (which contains 0 calories in 12 fluid oz.), the calorie count for this drink is fairly low for an alcoholic beverage.

I like a drink that is not really sweet, so I really enjoyed this Sparkling Coconut Mojito without the addition of the Stevia, but if you prefer a sweeter drink, add liquid Stevia to taste. Cheers!

Sparkling Coconut Mojito

Servings: 1

Ingredients

  • 1 oz Silver or White Rum (we used Kōloa Kauaʻi White Rum)
  • 1 oz Coconut Rum (we used Kōloa Kauaʻi Coconut Rum)
  • 1 can LaCroix Coconut Sparkling Water
  • 10 Fresh Mint Leaves
  • 1 tsp Lime Juice
  • 1 – 3 drops Liquid Stevia (optional)

Instructions

  • Add the lime juice to a glass with the mint leaves and gently muddle.
  • Add the rums to the lime juice and mint leave mixture and stir.
  • Pour the mixture into a tall glass over ice, then top with the LaCroix Coconut Sparkling Water.
  • Add 1-3 drops of liquid Stevia to taste (optional)
  • Garnish if a lime wedge, if desired, and serve.

July 11 is officially dubbed National Mojito Day according to the folks that have put together the National Day Calendar (along with National Blueberry Muffin Day and National Cheer Up the Lonely Day). Pink Lemonade Mojito

Could it be? Is summer finally here? If so – it may be time to break out some refreshing summer rum drinks and this one would certainly fit that category. For this recipe, use cranberry juice, pomegranate juice, strawberry puree, cherry juice or grenadine to give the cocktail a light pink hue and delicious taste. Ahhh…such a refreshing summertime cooler!

Pink Lemonade Mojito

Ahhh…such a refreshing summertime cooler!

Servings: 1

Ingredients

Instructions

  • Roll the lemon with your hand on a flat surface, juice, then reserve 1/4 peel.
  • In a tall glass, add rum, mint, lemon peel and simple syrup and gently muddle.
  • Fill glass with ice, then add strawberry puree, and the lemon juice and top it off with club soda. Stir slightly.
  • Garnish with a lemon slice and some mint leaves.

Notes

Cranberry juice, pomegranate juice, cherry juice or grenadine can be substituted for the strawberry puree. Depending on the red juice you use, you may need to add a little more or less simple syrup to taste.

10 Best Tropical Rum Drinks

Why is it that the taste of a tropical rum drink can sometimes transport us right back to a hammock on a beautiful beach or a great time with friends at one of our favorite beach bars? Still, whenever I taste a Piña Colada, I can close my eyes and almost feel a light sea breeze blowing while lounging on our boat in the evening during our first BVI sail….

We’ve put together a list of 10 Best Tropical Rum Drinks – those that we remember fondly from our past vacations in the sun. What tropical rum drinks would make your list?

1. Piña Colada


Can’t remember the first one I tried, but this is one frozen concoction of pineapple, coconut and rum is one that brings us right back to the islands…This one was enjoyed at The Top Of The Baths, Virgin Gorda.

2. The Painkiller

We sampled out first Painkiller when there was a Pusser’s in Cruz Bay on St. John many years ago… It has become one of our favorites and is available nearly everywhere in the Caribbean now – especially anywhere in the Virgin Islands. And it has a pretty tasty cousin too – The Nilla Killa!

3. Caribbean Rum Punch

We’ve enjoyed SO many rum punches from tropical locales far and wide that we should be some kind of Rum Punch experts by now. Every place seems to have their own “secret” recipe, but can’t seem to find too many we don’t care for. The difference? The type of rum used and the different fruit juices. One word? YUM!

4. Frozen Rum Runners


Just plain awesome. Nothing quite cools ya off as well as a Frozen Rum Runner on a hot tropical day. The non frozen variety are great as well, but the frozen ones, well, they’re kinda like a slushee with a REALLY good kick!

5. Bushwhacker

Bushwackers’s. Oh. my. I got a taste of my first Bushwacker atop Paradise Point in St. Thomas many, many years ago and was pretty much hooked. I mean, who wouldn’t be? Chocolate, rum and the amazing overlook of Charlotte Amalie – wow, paradise.

8. Banana Daiquiri

Creamy banana goodness mixed with rum? Ahhh… yes. Here’s one that we really enjoyed at Saba Rock Resort in the BVI (pre-Irma). Maybe the great view had something to do with it??

9. Mai Tai

Aloha! First enjoyed on a dinner cruise in Hawaii, this wonderful concoction brings back memories of swaying palm trees and the sound of the ukelele … Requires a few more ingredients than some of the other tropical rum drinks listed, but well worth it!

Melon Mojito

Can you ever have too many Mojito Recipes? Of course not! Our favorite will always be the traditional Perfect Mojito, but during the summer, these fruity mojitos are perfect themselves – so sweet, light and refreshing!

Melon Mojito

These fruity mojitos are perfect themselves – so sweet, light and refreshing!
Course: Drinks
Servings: 1

Ingredients

  • 3/4 oz. Midori Melon Liqueur
  • 1 1/2 oz. Light Rum
  • 2 Tbs. Mint Infused Simple Syrup (see recipe below)
  • 1 Tbs. Lime Juice
  • Club Soda
  • Fresh Honeydew Melon Balls

Instructions

  • To a rocks glass, add the lime juice and mint infused simple syrup.
  • Add the light rum and the melon liqueur.
  • Add ice and melon balls and top off with the club soda.
  • Garnish with mint leaves and lime. Enjoy!!

Notes

Mint Infused Simple Syrup
1 cup sugar
1 cup water
Stems from 1 bunch of fresh mint
In a small saucepan, combine sugar, 1 cup water, and mint stems. Place over medium heat, and cook, stirring occasionally, until sugar is dissolved. Remove from heat; let cool. Strain through a sieve. Syrup can be stored in an airtight container in the refrigerator for about 2 weeks.

Mango Mojito

Today we had a lovely ripe mango sitting on the countertop and so I thought I’d try it out in a mojito recipe. There were numerous mango mojito recipes on the web, so we tried a few, changed one up a little and came up with a winner!

We assembled the ingredients and began mixing, nearly drooling at the sweet aroma of the mango. Be sure you choose a ripe mango for this recipe for smooth consistency and the best taste. You may be able to substitute mango nectar for the actual mango, but the real fruit tasted delicious in this drink. We used Cruzan Mango Rum for the added sweetness and another shot of  mango taste, but a white rum can also be used. Makes a great summertime treat!

Mango Mojito

There were numerous mango mojito recipes on the web, so we tried a few, changed one up a little and came up with a winner!

Ingredients

  • 2 oz. White Rum or Cruzan Mango Rum (we used Cruzan Mango Rum)
  • 3-4 oz. Club Soda
  • 1 small Mango (very ripe with skin removed)
  • 1/2 Lime
  • 5 Mint Leaves

Instructions

  • Blend the mango and rum in a blender and set aside.
  • Muddle the mint leaves and juice of 1/2 lime. Add the club soda and rum/mango mixture.
  • Add a bit more club soda if needed so that the mixture is not too thick. Gently stir.
  • Pour over ice in a tall glass and stir again before serving. Garnish with mint.
