Lemon Pomegranate Fizz

Light and refreshing and not too sweet – the perfect summer rum drink! Play with the ratio to make it just right for you. More pomegranate juice or lemon juice to increase the tartness, more lemon lime soda to increase the sweetness, or use diet lemon lime soda if you want to cut back on the calories! Ahhh…enjoy!

Ingredients

Instructions

  • Add rum, pomegranate juice and lemon juice to an ice filled cocktail shaker.
  • Shake lightly and pour in a short cocktail glass over crushed ice.
  • Add lemon lime soda to fill to the top. Garnish with a slice of lemon.

Rumaggedon

We enjoyed a week long sail through the Grenadines last year on the tall ship Diamant with Island Windjammers and in addition to the great itinerary (read about the trip here: Island Windjammer Cruise) we absolutely loved happy hour. Most evenings we were served up the scrumptious Rum Swizzles that the Diamant is famous for, but on the last evening aboard, they pulled out the stops and served up another excellent rum drink called the “Rumaggedon”. Even with some intense prying, o.k – maybe even a little whining,  our bartender Brandon would not divulge the yummy recipe. Imagine our surprise when we found that Island Windjammers posted the Rumaggedon recipe on their Facebook page today! I’m sure these are the tastiest when enjoyed during happy hour on board the Diamant or Sagitta, but maybe you can mix up a batch, close your eyes and start imagining your next sail!

Rumaggedon
(recipe: Island Windjammers)

2 parts dark rum
2 parts orange juice
1 part mango juice
1 part guava and/or passion fruit juice
1-2 dashes of bitters
top with grated nutmeg and cinnamon
garnish with orange wheel (or a cherry and umbrella!)

Shake, pour over ice, sprinkle with grated nutmeg and cinnamon, garnish and enjoy!

Watermelon Rum Freeze

Looking for a cold and refreshing treat for summer? This Watermelon Rum Freeze might just do the trick. Cold, refreshing and fruity – with a punch of rum of course! Make it in large batches and store it in the refrigerator for a cold summer party beverage!

Watermelon Rum Freeze

Cold, refreshing and fruity – with a punch of rum of course! Make it in large batches and store it in the refrigerator for a cold summer party beverage!
Servings: 9

Ingredients

  • 3 cups Ripe, Seedless Watermelon
  • 1 1/2 liters Lemon Lime Soda (diet can also be used)
  • 6 oz. Frozen Lemonade Concentrate
  • 1/2 750 ml bottle White Rum

Instructions

  • Slightly blend watermelon on low in a blender (it’s ok if there are small chunks).
  • In a very large bowl, add all ingredients and stir.
  • Clean out the blender and set it on a flat surface, such as a counter. Put one of the gallon bags on the inside and pour in mix until 1/2 to 3/4 full, then remove bag and close tightly. Repeat with the other bag. 
  • Put bags in the freezer for 12-24 hours.
  • Spoon into glasses and garnish with watermelon balls and mint.

Rum Margarita Recipes

Need a Margarita recipe using rum for Cinco de Mayo or National Margarita Day? Si, si – we did too, so we experimented a little and came up with these two. With the rum, the taste  resembles a daiquiri, but with not a lot of added sugar, it’s not as sweet and you get the nice margarita tartness. Mmmm – Salud!

Classic Rum Margarita

Servings: 1

Ingredients

Instructions

  • Rub the edge of a margarita glass with a slice of lime then dip the edge in the margarita salt to lightly coat.
  • Shake all ingredients over ice then pour over crushed ice in the glass.
  • Garnish with a lime.

Strawberry Rum Margarita

Servings: 1

Ingredients

  • 2 oz. Light Rum
  • 5 large Strawberries (plus one extra for garnish)
  • 1 oz. Rosie's Lime Juice
  • Splash Simple Syrup
  • 1 c. Ice
  • 1 tbsp. Sugar or Raw Sugar

Instructions

  • Rub the edge of a margarita glass with a slice of lime, then dip in sugar or raw sugar.
  • Put all ingredients in a blender and blend until smooth and creamy.
  • Pour into the margarita glass and garnish with a strawberry.

Frozen Mojito Pie

Frozen Mojito Pie, my, oh, my… I was looking for a dessert to make for company this coming weekend with just the right summertime taste. I ran across a recipe for a Frozen Mojito Pie that seemed to require a bit of tweaking, but with a few changes it turned out just right – cool and refreshing and just a little tartness from the lime compliments the sweetness of the rest of the ingredients. Guess I’ll have to make another one for this weekend, ’cause I’m pretty sure this one will be gone by then…

Frozen Mojito Pie

Cool and refreshing and just a little tartness from the lime compliments the sweetness of the rest of the ingredients.

Servings: 8

Ingredients

Instructions

  • Soften cream cheese at room temperature.
  • In a large bowl, add cream cheese, whipped cream and sugar.
  • Using a blender, blend ingredients until very smooth.
  • Fold in lime zest, lime juice, rum and mint leaves and blend by hand until evenly distributed.
  • Pour into graham cracker crust, cover and freeze overnight. Let sit for 15-20 minutes before slicing and serving, garnish with a bit of lime zest.

Lime In De Coconut

You put de lime in de coconut and drink ’em both up…

A smooth, blended, frozen concoction with the wonderful taste of lime and coconut. Light and tasty. Serve it in a coconut with an umbrella for a real tropical look.

Lime in de Coconut

A smooth, blended, frozen concoction with the wonderful taste of lime and coconut. Light and tasty. Serve it in a coconut for a real tropical look!

Servings: 2

Ingredients

Instructions

  • Pour rums and lime wedges in a blender and blend until the lime is broken into very small specks.
  • Add lime juice and Coco Lopez and ice and continue to blend until smooth. 
  • Add more ice until it becomes quite slushy.
  • Pour into a coconut glass (or real coconut half) and garnish with a lime slice. (biodegradable straw and umbrella optional!)

Pineapple Breeze

Pineapple Breeze

Servings: 1

Ingredients

  • 1/2 c Orange Juice
  • 1/2 c Fresh Pineapple (canned can be substituted, but fresh tastes SO much better!)
  • 1/2 c Soda Water or Lemon Lime Soda (we used soda water for a little less sweetness)
  • 2 oz Coconut Rum
  • 1 c Ice
  • sprinkle Nutmeg (freshly ground, if possible)

Instructions

  • Put orange juice pineapple, soda, coconut rum and ice in a blender
  • Blend ’til smooth and frothy. (We left little bitty chunks of pineapple, ’cause that’s just how we roll!)
  • Pour in a glass, garnish with pineapple and nutmeg.

Want to enjoy the taste without the alcohol? Substitute Coconut Water or Coconut Milk for the rum!

Light & Minty Cran Rum

Like the taste of tart and tangy cranberry? If so, you might enjoy the taste of this easy, light and refreshing cocktail. No sugar added to this one, so it’s not an overly sweet combination. I love the addition of the mint which adds a bit of freshness to the mix.

If you like your cranberry a little sweeter, you might try our Cranberry Mojito recipe which adds a little brown sugar to tame the tang just a bit. Or, just add a drop of Stevia or a splash of a lemon lime soda!

Bahama Mama

We knew we’d like the taste of this tropical concoction when we heard it contained 3 different rums – oh, AND Kahlúa! Recipes for a Bahama Mama can be quite different – some contain banana liqueur instead of Kahlúa and some contain orange juice instead of lemon juice. This is one of our favorite recipes for a Bahama Mama – not too sweet, but a great tropical taste!

Bahama Mama

Ingredients

  • 1/2 oz. Dark Rum
  • 1/2 oz. Light Rum
  • 1/2 oz. 151-Proof Rum
  • 1/2 oz. Kahlúa
  • 1 oz. Lemon Juice
  • 3 oz. Pineapple Juice (unsweetened)
  • 1 slice Pineapple or Orange and Maraschino Cherry (for garnish)

Instructions

  • Shake the rums, Kahlúa, lemon juice, and pineapple juice with ice then strain over crushed ice into a chilled glass.
  • Garnish with a pineapple wedge or orange slice and a maraschino cherry.
