Papaya-Mango Rum Float

Papaya, mango, rum and ice cream – what’s not to like about this summer dessert drink? This tasty concoction reminds me of the great fresh fruit (and rum!) that we enjoyed in Jamaica. We just barely blended the papaya, mango and rum so that there were still small chunks of papaya – but you can blend it longer if you want a creamier mix.

Papaya-Mango Rum Float

Papaya, mango, rum and ice cream – what’s not to like about this summer dessert drink?

Servings: 1

Ingredients

  • 1/2 c. Fresh Papaya
  • 1/2 c. Mango Juice
  • 2 oz. White Rum
  • 3 scoops Vanilla Ice Cream
  • Sliced Papaya and Lime

Instructions

  • Prepare the papaya by peeling, removing seeds and cutting into cubes.
  • Blend papaya, mango juice and rum in a blender until desired consistency.
  • Place 3 scoops of vanilla ice cream in a tall glass, then pour the papaya, mango and rum mixture over the top. Stir slightly before drinking. Cheers!

Ahhh….Piña Coladas. The taste simply transports us back to the islands. With only 1/4 c. rum in the recipe, these tasty cupcakes don’t pack quite as much punch as the actual cocktail, but that means you can probably enjoy them anytime!

Tropical Sunrise

As pretty as a tropical sunrise, this rum cocktail is a refreshing choice of beverage – even for brunch!

Tropical Sunrise
(makes one)

1-1/2 oz. silver rum
1/4 c. pineapple juice
1/4 c. orange juice
1 oz. triple sec
1 oz. grenadine
orange slice and cherry for garnish

Shake rum, juices and triple sec over ice. Fill serving glass 1/2 full of ice and add grenadine. Strain remaining ingredients slowly into the serving glass. Garnish with a slice of orange and a cherry. Gently stir before serving.

Mango Colada

If you like the taste of mango, you’re gonna love this cold and creamy blended rum drink. I can tell that as the weather gets warmer and summertime sets in, this will be a refreshing favorite here! Enjoy!

Mango Colada

Servings: 1

Ingredients

  • 1/2 c Frozen Mango Chunks (fresh mango can also be used but you may have to increase the amount of crushed ice)
  • 1/2 c Pineapple Juice
  • 1 tbsp Fresh Lime Juice
  • 1-1/2 oz Cream of Coconut
  • 1-1/2 oz White Rum
  • 1 c Crushed ice
  • Pineapple Slice and Maraschino Cherry for Garnish

Instructions

  • Add all ingredients (except the pineapple slice and maraschino cherry) to a blender and blend until smooth and creamy.
  • Pour into a hurricane style glass and garnish with the pineapple slice and maraschino cherry.

VooDoo Juice

We’re headed to St. Thomas soon and planning a short stay at Bolongo Bay. One of the drinks listed on the menu at their beach bar, Iggie’s, is VooDoo Juice, which is described as lots of Cruzan rums, a little juice & a bucket to drink it in! Intrigued, we looked up some recipes for VooDoo Juice and found that this concoction truly is a LOT of rum and a little juice! The recipe below can be used for one tall (and VERY strong) drink or two shorter drinks.

We’ll give VooDoo Juice a try at Bolongo Bay too and let you know how they compare – bucket and all. Pretty sure it’ll taste even better just because we’ll be sitting on a beautiful beach in the warm Caribbean sunshine…

VooDoo Juice

The only thing scary about this drink is its name and the amount of rum it contains. Be careful for it will surely put you under its spell…
Course: Drinks
Servings: 1 tall

Ingredients

Instructions

  • Pour all ingredients in a tall glass over ice. Stir slightly. (We added just a splash of cherry juice for color.)
  • Garnish with a cherry or orange slice. Float the .5 oz. dark rum on the top just before serving.

Appleton Rum Factory Tour, Jamaica

Deep within the beautiful Jamaican countryside lies Appleton Estate, home of the family of wonderful Appleton rums
. During our recent trip to Jamaica, we made the long trip from Negril through the lush fields of Nassau Valley, to take a tour and learn more about Appleton rums.

During the drive to Appleton, we passed by fields and fields of sugarcane, as well as mangoes, bananas, breadfruit and peanuts.

The estate itself sits on a beautiful site in lush Nassau Valley, close to the Black River.

We arrived at Appleton, were greeted by the friendly staff, paid our tour fee ($25 per person) and ushered into the bar, where we were offered a rum punch.

While sipping the tasty punch, we watched a brief video on the history of Appleton Estate and it’s rum.

Our tour guide then led us outside then to the estate grounds, where we were shown how donkeys were used to help squeeze the sugar cane and many other historical artifacts that have now been replaced with modern technology and processes.

We climbed the lookout tower to get a great view of the surrounding estate, countryside and limestone hills that protect the estate.

The tour moved on to the area where the distilling and aging take place.

Photography was not permitted in the actual distilling area, but we were able to snap some pictures in the aging area, where the rum is aged and rests for for many years in oak barrels.

After learning about the different distillation processes and examining the aging areas, we had the chance to press our own sugarcane and sample “wet sugar” (molasses) out of a copper pot.

A few more pictures of the grounds and we headed in to the best part (in our opinion) of the tour – the rum tasting.

We were given the opportunity, and encouraged, to try all of the rums that are somehow connected in the Appleton Rum Family including Wray & Nephew Overproof and Rum Cream, Coruba, Jamaican Blue Mountain Mist Coffee Liqueur and several Appleton Rums such as V/X and Genesis (white).

Unfortunately,  the wonderful aged rums, Appleton Estate, Appleton 30 and Appleton 50 were not available for sampling. We though about bringing some of the Appleton 50 home and probably would have it we had more room in our suitcase… ;)

Is the Appleton Rum Factory Tour right for you? The cost of the tour is $25.00 per person (which includes a small complimentary bottle of rum to take with you). We paired the Rum Factory Tour with YS Falls and Floyd’s Pelican Bar, which made it an affordable experience for us. The cost of getting to Appleton can be high from Ocho Rios, Montego Bay and Negril, but if you enjoy rum and would like to learn more about a premium rum manufacturer, the estate it’s produced on and have the opportunity to sample different rums in their portfolio, you will probably really enjoy this tour. We did.

Rum ‘N Eggnog Shooter

It’s called a shooter because of the size of glass it’s served in, but we’d recommend sipping this holiday treat! More like a desert than a drink, it’s looks will impress your guests too! Get the nice layered effect by pouring each layer slowly over the back of a spoon. Use a nice rum for this one for a tasty full bodied mix with the eggnog and Kahlúa.

Rum 'N Eggnog Shooter

Ingredients

Instructions

  • Pour the Kahlúa in the bottom of a shooter glass.
  • Using the back of a spoon, slowly pour the eggnog on top of the Kahlúa.
  • Add the rum on top of the eggnog using the same method as the eggnog.
  • Finish it off with a nice dollop of whipped cream and sprinkle with nutmeg.
  • Before sipping, gently stir to blend all of the layers together.

Candy Cane Cocktail

Peppermint, chocolate and rum…ahhhh, what’s not to like about that combination? Here’s a recipe that can be used with the Candy Cane Infused Rum we featured recently. This decadent dessert is a treat for your palate and your eyes and is sure to delight your holiday revelers.

Candy Cane Cocktail

Peppermint, chocolate and rum…ahhhh, what’s not to like about that combination?

Ingredients

Instructions

  • Pour a little chocolate syrup on a small plate or bowl and dip the rim of each glass in the chocolate.
  • Gently dip the chocolate covered rim in the crushed candy canes to coat. Set aside.
  • Pour the rums and white chocolate liqueur in a shaker over ice, shake gently, then pour into chocolate and candy cane rimmed glasses.
  • Garnish with some whipped cream and a candy cane.
