Creamy Candy Cane Rum

Creamy Candy Cane Rum

If you like rum, peppermint and chocolate, you’ll love the taste of this creamy drink! Great holiday look and taste!

Ingredients

  • 2 oz. Vanilla Rum
  • 2 oz. White Chocolate Liqueur we used Godiva
  • 2 oz. Cream
  • 1 oz. Peppermint Schnapps
  • 4 oz. Lemon Lime Soda we used 7up
  • 1/2 oz. Grenadine
  • Candy Cane
  • Sprig of Mint

Instructions

  • Pour rum, white chocolate liqueur, cream, peppermint schnapps and lemon lime soda in a shaker over ice.
  • Gently shake until frothy. Strain into and garnish with martini glasses, a candy cane and a sprig of Mint.
  • Right before serving, pour the Grenadine down the inside of each glass, shaking any remaining droplets over the top of the drink. Serve immediately.
  • For a lighter drink, substitute milk for the cream and use a diet soda. Hey, gotta save room for the other goodies!

Cranberry Mojitos

As the holidays approach, we started thinking about cranberry rum drinks and how mint and cranberry might make a refreshing and festive combination. There were several recipes floating around for Cranberry Mojitos and as we experimented with them, we came up with one that we really loved. So, gather your cranberries and rum, mix yourself a refreshing holiday concoction and enjoy a taste of the holidays!

Cranberry Mojitos

Gather your cranberries and rum, mix yourself a refreshing holiday concoction and enjoy a taste of the holidays!

Ingredients

Instructions

  • Muddle mint, brown sugar, dried sweetened cranberries and lime juice. Add light rum and cranberry juice, stir gently. Pour into a tall glass over ice. Garnish with lime or cranberries if you wish.
  • We liked having the dried cranberries in the drink, but if you’d prefer not to – strain the drink as you pour it over ice.

The Slimer

Still looking for a Halloween cocktail that you can serve when you have friends for dinner…er…I mean have friends over for dinner? (insert evil laugh…) You might enjoy this one called The Slimer. Now for those of  you who saw the original Ghostbusters movie from 1984, you probably will recall the cute little green thing made of ectoplasm who left a trail of slime everywhere he went. Anyway – this cocktail may be green, but it ain’t too slimy – thank goodness.

So – mix yourself up a batch this Halloween and prepare to be slimed (or to perhaps get slimed if you drink too many?)

The Perfect Mojito

What makes a perfect mojito? When you look on the web, there’s more mojito recipes than you can shake a muddler at.  So what is it? The type of rum used? The amount of mint? The setting?

I had my first mojito in an airport. I know – odd place, but it was in the Miami airport on a layover for a flight to the Caribbean. We were in the mood to get the Caribbean party started and walked past a Bacardi kiosk with a very long line of people waiting for the only drink they were fixing…a mojito. We thought with that long of line the tropical concoction must be good, so we pulled up and eagerly waited to give a mojito a try.

We watched as the bartenders meticulously muddled the mint and lime, added simple syrup and the rum, poured it into a tall glass, added a little club soda and garnished with a stick of sugarcane. After shelling out $12.00 for each drink, we grabbed ours and eagerly took our first whiff. Ahhh…so minty and fresh smelling. After one sip, we were hooked and ended up purchasing an additional one or two before heading for our flight.

We’ve tried many recipes for mojitos since that first taste of one in the airport and truthfully, many are really good. But for some reason, the taste of that first mojito is the one that will always be our favorite and reminds us every time of the excitement we feel when heading south for vacation and a little Rum Therapy…

The Perfect Mojito

The taste of a good mojito reminds us every time of the excitement we feel when heading south for vacation and a little Rum Therapy…

Servings: 1

Ingredients

  • 1 1/2 oz. white, light or silver rum (We like to use Bacardi Superior for our mojitos)
  • club soda
  • 12 mint leaves
  • 1/2 lime
  • 2 tbsp simple syrup

Instructions

  • Muddle 12 fresh mint leaves and 1/2 a lime in a tall glass.
  • Cover with 2 tbsp. of simple syrup and top with ice.
  • Add rum and top with club soda.
  • Stir well and garnish with a lime wedge and sprig of mint (and a stick of sugarcane if you can find it!)

Rum Glazed Spare Ribs

BBQ – Holiday Weekend – our house. We were in charge of the grub and drinks and started looking for something a little different. Cruzan Rum had posted a delicious looking Planter’s Punch recipe from St. Croix mixologist Jesse Card so we had the drink – what should we BBQ? We settled on a delectable looking rib recipe that called for rum and even though the recipe calls for the ribs to be cooked in the oven instead of on the grill, we finished them off with a few minutes on the grill for that good BBQ taste. We used Cruzan Black Strap in the rib recipe and well, it was a hit with the guests filling the house with an incredible deep rum aroma. Enjoy!

Rum Glazed Spare Ribs

Ingredients

Instructions

  • Preheat oven to 350°F. Trim excess fat off ribs and brush both sides with vegetable oil.
  • In a bowl, mix brown sugar, paprika, cumin, pepper and salt.
  • Rub mixture evenly over ribs. Place ribs in a large roasting pan and pour in 1 cup water. 
  • Cover with aluminum foil and bake until tender, 1 1/2 hours.
  • In a small pan, mix rum, sugar, tomato paste, Worcestershire sauce and Tabasco. Bring to a boil over medium heat; cook for 5 minutes, stirring occasionally. Remove foil from roasting pan, pour off all but 1/2 cup of liquid in pan and pour rum mixture over ribs. Return pan to oven and continue baking, uncovered, turning ribs several times and basting with liquid in pan, until meat starts to pull away from bones and is very tender, about 1 hour. Add a little water as necessary to prevent scorching.
  • If desired, place them on the grill for a few minutes, basting with the liquid from the pan or BBQ sauce.
  • Let ribs rest on a cutting board for 5 minutes. Slice into individual portions and serve hot with barbecue sauce on the side, if desired.

The Hurricane

Many, many – o.k., many years ago I traveled to New Orleans for a conference and experienced my first Hurricane. No, thankfully not the terrible weather phenomenon that strikes terror in many an islander or coastal region resident, but an equally terrifying drink with the same name. I mean – just look at all the rum in this thing!!

We found several recipes and several of them called for passion fruit syrup which we didn’t have, so we opted for this one. I prefer the recipe with the passion fruit, but by the time I took my last sip of this one, I couldn’t really tell the difference ;) Just be careful, Hurricanes can knock you right off your feet!

Strawberry Rum Sundae

Ironic, isn’t it, that National Relaxation Day comes one day before National Rum Day! Combine the two and it seems as if you have a recipe for Rum Therapy! Here’s a recipe idea for National Relaxation Day.  Creamy, smooth and summery – so refreshing!

Strawberry-Rum-Sundae-(600)-O
Strawberry Rum Sundae
(makes 2)

3 1/2 – 4 oz. Cruzan Strawberry Rum
1 1/2 cups of your favorite Vanilla Ice Cream
1 cup fresh sliced strawberries
1/2 c. pineapple juice
1 cup ice

Blend rum, ice cream, strawberries and pineapple juice in a blender until smooth. Add ice, blend until thick and smooth. Add more ice if needed for thickness. Pour in glasses and garnish with fresh strawberry slices.

Two additional options –
1. Drizzle top of the drink with chocolate syrup.
2. Fill straw with 1/8 oz Cruzan Black Strap Rum

Arnold Palmer with a Kick

Fore!! I mean – SCORE!! I ran across a recipe for a rum spiked Arnold Palmer the other day and being the golf enthusiasts we are, thought we’d give it a try. Unfortunately, the liquor stores in our area don’t carry a very wide selection of, well, anything – so try as I might, I could not locate the bottle of Don Q Mojito rum that the recipe called for. Undaunted, we figured we’d create our own version for now and this is what we came up with. It’s easy, neat and classy and I think it’ll be perfect for after my round this Friday where I play with a lovely group of talented ladies who actually tolerate my occasional “hand” wedge from the bunker!!

Arnold Palmer with a Kick

Ingredients

Instructions

  • Lightly muddle mint leaves and lime juice.
  • Add rum, iced tea and lemonade.
  • Strain into a large glass over ice, shake and then pour into rocks glasses over ice.
  • Garnish with mint. If you like a sweeter taste, add 1/2 to 1 tsp. simple syrup to the mix!

Mai-Tai’s

Ahhh, the Mai Tai. Claimed to have been created in 1944 by Victor Jules Bergeron (Trader Vic), his claim was later disputed by the owner of the Hollywood Bar, Don the Beachcomber’s. Regardless of it’s contested beginnings, this delightful, tropical drink will make you feel like you are sitting under a swaying palm in Hawaii.

Other rums can be substituted for the dark and aged rums listed, but be sure to use a good quality rum that you really enjoy.  Ke aloha!

Mai Tai

Probably the best known tiki drink, the Mai Tai is a delicious combination of rum, orange curacao, orgeat and lime. It's truly a tropical delight!
Servings: 2

Ingredients

  • 1 1/2 oz. Fresh squeezed lime juice
  • 1/2 oz. Simple syrup (use Demerara sugar, if possible)
  • 1 oz. Orgeat syrup
  • 1 oz. Cointreau
  • 1 1/2 oz. Goslings Black Seal Rum (other dark rums can be substituted)
  • 2 1/2 oz. Mount Gay Eclipse Rum (other aged rums can be substituted)

Instructions

  • Shake vigorously with cubed ice.
  • Strain into double old-fashioned glass, filled with crushed ice.
  • Garnish with your desired combination of mint, cherry, lime and orange wedge.

Firecracker Rum Shots

Ahhhh…Independence Day. BBQ’s, games, friends, fireworks and rum shots? Why not! Here’s a recipe for Firecracker Rum Shots sure to spice up your 4th of July picnics. Got kids around? Make another round – sans the rum – (maybe a different color for easy identification) for the young ones and designated driver’s.

Glass shot glasses work well for very small parties (and look good in the pictures), but these 2 oz. Mini Red Solo Cups  work quite well for larger gatherings!

Firecracker Rum Shots

Course: Drinks
Servings: 12 1 1/2 oz. shots

Ingredients

Instructions

  • Boil water and add Jello mix. Stir until dissolved.
  • Add the rum to the Jello mix, stir well and pour into shot glasses or these disposable mini red solo cups.
  • Place glasses or cups in the refrigerator for about 4 hours.
  • Add whipped cream to the top right before serving.

Notes

Option 2: Want to make your shots taste a little cinnamony? Add 1/4 c. of red hots to the boiling water before you add the Strawberry Jello and use white rum instead of flavored rum. 
Option 3: Want a strong cinnamon taste? Use Rum Cojones Cinnamon Rum!
