Coco Beach Bar & Grill, Treasure Cay

Close to the center of Treasure Cay Beach, the gorgeous stretch of sugar soft white sand and turquoise water found on North Abaco Island in the Bahamas, you may spot a colorful, but unassuming little beach bar/restaurant called Coco Beach Bar and Grill.

Coco Beach Bar and Grill is right on beautiful Treasure Cay Beach and in addition to offering some very refreshing Bahamian libations, it also serves up breakfast, lunch and dinner.

The interior is a casual nautical theme with plenty of comfortable seating, and in addition, there are picnic tables on the deck. We opted for deck seating because, well, look at the view…

We ordered a wrap for lunch, which came with a ton of crispy fries, along with a Rum Punch and a Goombay Smash. Not quite the same as the Goombay Smash we had just enjoyed at Miss Emily’s Blue Bee Bar on Green Turtle Cay a few days earlier, but everything tastes delicious after a morning of playing on the beach, doesn’t it?

Once you have finished your meal, you can rent a chair and/or palapa from Coco and spend the rest of the afternoon lazing away on one of the prettiest beaches we’ve seen.

From there, the bar is just steps away, so you can make sure you stay hydrated, or in our case “rum”drated.

Tropical Island Iced Tea

Don’t let the pink color fool you. The Tropical Island Iced Tea is a variation of the Long Island Iced Tea and can pack the same punch. Don’t let the pink color fool you. The Tropical Island Iced Tea is a variation of the Long Island Iced Tea and can pack the same punch. Refreshing and not overly sweet, this could become a summer favorite! We found the original recipe on SippitySup.com, but changed it up a bit and added the whole can of Kern’s Guava Nectar to make a slightly less potent and more refreshing drink. Delicious! Bring on summer!

Tropical-Island-Iced-Tea(a)-(600)-O
Tropical Island Iced Tea
(makes two)

1 oz spiced rum (we used Cockspur Spiced Rum)
1 oz vodka
1 oz tequila
1 oz gin
1 oz cointreau
11.5 oz guava nectar (we used Kern’s Guava Nectar)
1 oz fresh lime juice
2 oz club soda
lime wedges for garnish

Pour all ingredients into two tall ice-filled glasses. Gently stir. Garnish with fresh lime wedges.

Funky Monkey

A while back, we were asked to locate the recipe for a Funky Monkey, a blended drink that FB friend Carol had enjoyed while vacationing in the Caribbean. We came across several versions, but most contained a delectable combination of rum, banana, coconut and chocolate…

After a little bit of “research” on the amounts of each ingredient, we came up with the following recipe. Tweek the amounts to create the best blending of tastes for your palate!

Funky Monkey

Contains a delectable combination of rum, banana, coconut and chocolate…
Course: Drinks
Servings: 1

Ingredients

  • 1 oz. Gold Rum (We used Cruzen Aged Dark Rum)
  • 1 oz. Coconut Rum (We used Blue Chair Bay Coconut Rum)
  • 1/2 oz. Banana Schnapps
  • 1/2 oz. White Chocolate Liqueur
  • 3 oz. Coconut Milk
  • 1 Banana
  • 1 c. Ice
  • Toasted Coconut (for garnish)
  • Chocolate Sauce (for garnish)
  • Banana Slices (for garnish)

Instructions

  • Add rums, liqueurs, coconut milk and banana to a blender with ice and blend until smooth and creamy.
  • Pour into a tall glass and garnish with a drizzle of chocolate, toasted coconut and banana slices.

Caribbean Mist

We recently ran across a picture of a beautiful blue rum drink called a Caribbean Mist on a website called Something Turquoise (picture of the drink). The hue of this drink was an amazing  color, similar to the color of the water in say, The Bahamas, or Turks and Caicos. We needed to try it.

The recipe is simple and we had the ingredients on hand, so we mixed up a batch. The color was greener than pictured, so we tried one more time.

Now we’re certainly not rocket scientists, but pineapple juice is yellow and Blue Curacao is blue and when you mix yellow and blue you get…green. So – this is how the drink looked when we made it the second time.

The color was still not as blue as the beverage featured on the website, but it was pretty and had a wonderful light and fruity taste.

Pour it into a champagne glass and this beverage would work well for brunches or other nice occasions.

Ingredients

Instructions

  • Lightly dip the rim of each champagne glass in lemon or lime juice, then into the sugar (sanding sugar if available).
  • Fill the glasses with crushed ice.
  • Pour the rum, pineapple juice and the dash of Blue Curacao in a shaker with ice and shake.
  • Pour the mixture in the glasses, then fill the rest of the glass with soda water.

Papa’s Pilar Dark Rum

Last week we were sailing the beautiful Abacos Islands of the Bahamas with two rum experts on board. I know, it’s rough, but we struggled through it.

One of the rum experts, Carlton Grooms, is the Director of Operations of Papa’s Pilar Rum, distilled in Key West, Florida. While we had previously sampled and enjoyed both the Papa’s Pilar Blonde and Dark Rums, we were able to get a little first-hand knowledge of this rich spirit and the best way(s) to enjoy it.

One particularly delightful evening aboard our sailboat, while watching the sun set over the calm Sea of Abaco, we learned that an easy, albeit delicious way to enjoy a glass of Papa’s Pilar Dark Rum is simply to add an orange slice and some grated dark chocolate to a pour. Both the orange and the dark chocolate accentuate and open up the aromas and tastes found in the rum. Although we enjoy sipping Papa’s Pilar Dark Rum neat, I believe we’ve found our new favorite way of enjoying a glass.

Oh, and the view didn’t hurt either…

Rumantic Kiss Cocktail

Do you like rum and want to make a delicious pre-dinner drink for your valentine? You might be feeling “rum”antic and this recipe may be just what your looking for. Follow the recipe for a slightly sweet, light cocktail. Like it sweeter? Try rimming the glass with a little sugar.

Rumantic Kiss Cocktail
(makes 2)

2 oz. white rum
6 oz. pomegranate juice
1-1/2 oz. grenadine (or strawberry syrup if you can find it)
4 oz. champagne
 fresh strawberry or chocolate covered strawberry for garnish

Pour rum, pomegranate juice, grenadine and champagne over ice and gently shake. Strain into two glasses and garnish with a fresh strawberry or chocolate covered strawberry.

Bob Marley Rum Drink

We sampled our first Bob Marley Drink – a shooter which was actually lit on fire before we drank it (don’t try this at home!!) during the Bob Marley Nine Mile Tour. The Bob Marley Shooter

Adapted from our our visit to the Bob Marley Nine Tour.
Course: Drinks
Servings: 1

Ingredients

  • 1 oz. Creme de Menthe
  • 1/2 oz. Banana Liqueur
  • 1/2 oz. Overproof Rum (we used Wray & Nephew, a Jamaican rum)
  • 1 oz. Grenadine

Instructions

  • Pour the grenadine into a shooter glass.
  • Layer the rum and banana liqueur by carefully pouring it over the grenadine over the back of a spoon.
  • Followed that with a layer of Crème de Menthe.

Skinny Piña Colada

In light of our recent “skinny” cocktail recipe postings, we were asked by Facebook friend Sherri if we could include a recipe for a Skinny Piña Colada. Certainly, we thought, we could find a way to take a bite out of the calories of this high calorie coconut creme and juice based cocktail whose taste takes us right to the islands?

Well, in this recipe, we did decrease the calorie level from 278.5 for one serving of our regular Piña Colada Recipe to 142 calories per serving in the following Skinny Piña Colada! For just a little added kick – add a .5 oz dark rum floater for an additional 32 calories :)

Skinny Piña Colada

Ingredients

  • 3/4 c Frozen Pineapple Chunks
  • 1/4 c (plus 2 tbsp) Unsweetened Coconut Milk
  • 1 oz Coconut Rum
  • .5 oz Dark Rum Floater (optional - add 32 calories)
  • Ice
  • Pineapple and Maraschino Cherry for garnish

Instructions

  • Blend all ingredients in a blender until smooth and creamy. 
  • Add more ice for a thicker consistency, or add a little water to thin. 
  • If desired, add a floater. Garnish with pineapple and a cherry.
