Painkiller Punch

A slight variation on the Caribbean favorite drink, the Painkiller, the Painkiller Punch lightens it up just a tad with coconut rum instead of cream of coconut. Additionally a splash of grendadine is added for color, we used coconut water ice cubes and of course we added a delicious dark rum floater. SO tropically delicious!

Painkiller Punch

Ingredients

Instructions

  • Pour coconut water into a mini ice cube tray and freeze ahead of time.
  • In a cocktail shaker, mix together the pineapple juice, orange juice, coconut rum, and gold rum.
  • Shake well, then pour over coconut ice cubes in a small glass.
  • Slowly pour a splash of grenadine over the ice in each glass and let sink to the bottom.
  • Slowly pour up to 1/2 oz. dark rum (as a floater) onto the top of each drink.
  • Garnish with fresh pineapple or orange slices on a cocktail pick.

Jamaican Me Crazy

We posted two recipe variations for the drink Jamaican Smile a while back, but recently were asked for a recipe for a drink called Jamaican Me Crazy. Happy to oblige, we did some research and came up with the following.  This one packs a punch with 2 shots of rum and 1 shot liqueur in each serving  but delivers a smooth tropical vibe with the banana liqueur and coconut rum…yum…
One of these could surely make-a-me-crazy…

Shark Bite

We have a niece who is infatuated with sharks. Well, let me rephrase that. I think she’s actually scared to death of sharks and being the wonderful aunt and uncle that we are, we send shark birthday cards and forward shark pictures and articles we come across. Thoughtful, aren’t we??! So, this one’s for you Sammy!

Anyway, Sammy was kind enough to remind us earlier this week that is was, in fact, Shark Week again on the Discovery Channel! So, today when we ran across a Shark Bite Cocktail Recipe on Facebook, I thought it would be appropriate to try it out and of course post a picture or two along with the recipe.

It’s actually a beautiful looking drink, as long as you don’t really think of why someone thought it looked like a Shark Bite…

Shark Bite

Ingredients

Instructions

  • Shake the rum, orange juice and lime with ice.
  • Strain into a glass.
  • Gently pour the grenadine on the top.

Mai-Tai’s

Ahhh, the Mai Tai. Claimed to have been created in 1944 by Victor Jules Bergeron (Trader Vic), his claim was later disputed by the owner of the Hollywood Bar, Don the Beachcomber’s. Regardless of it’s contested beginnings, this delightful, tropical drink will make you feel like you are sitting under a swaying palm in Hawaii.

Other rums can be substituted for the dark and aged rums listed, but be sure to use a good quality rum that you really enjoy.  Ke aloha!

Mai Tai

Probably the best known tiki drink, the Mai Tai is a delicious combination of rum, orange curacao, orgeat and lime. It's truly a tropical delight!
Servings: 2

Ingredients

  • 1 1/2 oz. Fresh squeezed lime juice
  • 1/2 oz. Simple syrup (use Demerara sugar, if possible)
  • 1 oz. Orgeat syrup
  • 1 oz. Cointreau
  • 1 1/2 oz. Goslings Black Seal Rum (other dark rums can be substituted)
  • 2 1/2 oz. Mount Gay Eclipse Rum (other aged rums can be substituted)

Instructions

  • Shake vigorously with cubed ice.
  • Strain into double old-fashioned glass, filled with crushed ice.
  • Garnish with your desired combination of mint, cherry, lime and orange wedge.
